It’s Christmas Eve, and tomorrow is our biggest family reunion of the year. It’s a pitch-in, and I’m falling back on one of my family’s favorite old standby meals: Crockpot Tenderloin. Crockpot meals are so easy and hassle-free, and Christmas is a time when the less hassle, the better!
Pork tenderloin was on sale this week for only a few cents more than a dollar a pound, so I was able to buy a really big tenderloin. I cut it into “coins” and put them in my slow cooker. Then I cut up two large onions and sprinkled both onto the pork in the crockpot.
Last year, I poured a jar of Pineapple Habanero pepper jelly over everything, and it was delicious. This year, I’m going to pour a jar of Texas Rib Candy over the pork; it’ll be awesome.
Put these ingredients in your crockpot before you go to bed, and all through the night the wonderful aroma will waft throughout your house and give you all fabulous dreams. In the morning, just turn off the crockpot and put it in the refrigerator. When it’s time to go to the reunion, take the crockpot’s interior out of the ‘fridge, fasten the handle to it, and put it in the back of the car. It’s freezing out there, so it will be fine until it arrives at Mom’s house and is plugged back in to reheat. Remember, it’s already completely done so all it has to do is reheat.
Don’t count on any leftovers; there aren’t any when I serve this at home, and with a houseful of family, even with three times the amount of pork, there won’t be any left over.
Pork Tenderloin Medallions can be made with any kind of pepper jelly. I just happen to have a jar of Rib Candy handy, this year.
