Even if you’re a vegetarian, you can still enjoy delicious grilled “meat substitutes.” Portobello mushrooms are yummy good, and a thick slice, slathered with Texas Pepper Jelly or Rib Candy, is every bit as tasty as a burger!
Ingredients:
4 portobello caps, stems and gills removed
1/2 cup Texas Pepper Jelly or Rib Candy – or BOTH! (flavors of your choice!)
1 minced garlic clove
1/2 teaspoon of kosher salt
buns, sourdough bread, really any kind of sandwich bread
1/4 cup feta cheese
1/2 teaspoon oregano
mixed greens
What to do:
Prepare your charcoal, or preheat your grill to medium-high. Mash the garlic and salt until you’ve got a smooth paste. Mix this paste with the pepper jelly or Rib Candy, and brush both sides of the mushrooms with the mixture.
Combine the feta cheese and oregano, and toss with the greens. Toast the bread or buns until crisp.
Put a grilled mushroom top-side down on the bread. Top with the greens mixture, and cap with the other slice of bread.
Yum.
You might want to grill more than these four portobellos, too. People who aren’t even vegetarians will want to try them, and you’ll need plenty.
