
Heat Up Asian Cuisine With Our Stir Fry Recipe

Nobody will argue about what you are making for dinner once they find out what it is.
When it’s Glazed Apple-Chicken Stir Fry, don’t count on there being any leftovers. You and your guests are going to love this recipe.
What is stir fry?
We’re going to give you our definition; a blend of vegetables, fruit, meat, rice, and a delicious glaze. All blended together in a wok or frying pan to create an all-in-one-dish meal. It’s what we consider the Asian version of the Cajun jambalaya.
What goes good with chicken stir fry?
Nothing! Huh? What? Only one dish for dinner? What about making it a well-rounded meal?
This is the really cool thing about any stir fry; beef, chicken, shrimp, sweet and spicy. It not only is a one-dish meal it is the main dish and only dish necessary since your meat, veggies, and starch are all accounted for.
Here’s how to make our spicy stir fry:
First, prepare all the ingredients. You can make this meal quick and easy the more prep you do in advance.
- The rice needs to be prepared.
- There is a lot of chopping and slicing when it comes to this dish. If you don’t know what the types of chopping styles are in our recipe, be sure to watch the videos or grab some culinary tips from What’s for Dinner.
- What makes our stir fry spicy is our habanero jelly. However, if you like a little extra kick you can always pre-season the chicken with our Jalapeno Seasoning or our tasty Three Pepper Seasoning before cooking.
If you plan on doing the pre-seasoning do it and then chop the other ingredients. By the time you are done chopping the chicken should be just right.
- Pre-season the chicken by putting the cubed chicken in a Ziplock™ bag. Toss in your choice of Craig’s seasonings, seal the bag and shake until all the chicken pieces have seasoning on them. Place in the fridge for about 15 minutes to let the seasoning soak into the meat.
While our recipe doesn’t call for broccoli, you can easily make this chicken broccoli stir fry, by just adding about 1/2 cup of broccoli florets.
Ingredients for our Texas Pepper Jelly Glazed Apple-Chicken Stir Fry recipe:
- 2 tbsp olive oil
- 1 tsp. curry powder – any strength
- garlic to taste – minced
- 2 c. shredded cabbage
- 1 c. julienned carrots
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 c. sugar snap peas
- 1 large apple, peeled, cored, coarsely chopped
- 1/2 c. Apple Habanero Pepper Jelly
- 1/4 c. golden raisins
- 3 c. cooked chicken breast, cubed or chicken thighs, chopped
- 3 cups cooked rice, any kind
- 1 green onion sliced
- pinch of salt for cooking rice
Directions on how to prepare the Chicken Stir Fry
Heat 1 tbsp of the oil in a pan or wok over medium-high heat; add the chicken. Cook the chicken until done. Be sure it is cooked all the way through because you will only be warming it back up in the final steps.
Set cooked chicken aside.
If you haven’t prepared the rice, do it while the chicken is cooking. Bring to a boil a large pot of water. Add a pinch of salt and add the rice. Cook to the directions on the package.
Heat the remaining tbsp of oil and curry in the same pan over high heat; add garlic to taste. Toss in the shredded cabbage, carrots, red and yellow bell pepper, sugar snap peas, and apple; stir and cook for five minutes. Then add pepper jelly and cook until the vegetables and apples are tender-crisp – just under ten minutes. Add more pepper jelly to taste.
Add the raisins and chicken and mix thoroughly. Add the rice and stir-fry for about five minutes, or until the cooked chicken is hot.
Garnish with the green onions or whatever you like (we like to toast sesame seeds for our garnish, but most people don’t have these in their pantry so we didn’t include it in the ingredients list), and serve while it’s hot.
Time-saving tips for our spicy chicken stir fry:
Again, prepare as much of the dish as you can beforehand.
- Use precooked chicken from the freezer
- Use Minute Rice™
- Purchase pre-cut bell peppers, green onions, and carrots in the vegetable aisle of the grocery store.
- Use bagged coleslaw or cabbage instead of having to shred a head of cabbage.
- Purchase pre-sliced apples in the grocery store refrigerated fruit section. These may need to be sliced thinner, but at least you have a head start.
All of these things will speed up your cook time and shouldn’t change the flavor of your stir fry. The only thing it will do is save you time!
How to make stir fry sauce?
There are hundreds of ways to make a sauce for stir fry recipes. Some use soy sauce, some use honey. We just use our flavorful Texas Pepper Jelly. No additional ingredients or cooking is necessary!
A really cool thing about our habanero jellies is we have lots to choose from. If you don’t want our apple jelly in this recipe, mix it up; use one of the other great flavors.
How many people will this recipe feed?
This recipe will serve 4-5 people with moderate appetites. Double the recipe if you’ve got really hungry people to feed.
If you have ice cream for dessert, put the pepper jelly on the table.
