TexasChristmas My goodness, so many of you have emailed me about Texas Pepper Jelly’s Spicy Thumbprint Cookies this past week! Your wish is my command, so here’s the recipe once again! Coincidentally, my husband wanted some of these cookies so badly tonight, he actually ventured into the kitchen and made a batch, all by himself. (Hey, I was busy!)

This weekend, why don’t YOU make a batch of spicy thumbprint cookies? They’re not like a regular cookies, you know; they’re spicy! This recipe’s cookies are also sugar-free! If you are diabetic, you can have some of these cookies. Besides, many of you are snowed-in, and people who are snowed-in simply MUST have cookies!

Ingredients:

1/2 cup butter, softened (not melted)
1 egg
1/2 teaspoon vanilla
1 and 1/4 cups flour
1/2 cup chopped nuts
3 teaspoons Splenda
Texas Pepper Jelly of your choice. Mix it up!

What to do:

In a large bowl, mix everything together except the Splenda and the Pepper Jelly.

Wrap in waxed paper and chill in refrigerator for about an hour.

Remove, unpeel, roll into little balls, and place them on an ungreased cookie sheet.

Dip your thumb in flour, and press firmly in the middle of each cookie, leaving a thumb-shaped indentation.

Bake 13-15 minutes at 350.

Remove from oven and sprinkle with Splenda.

Once cookies are cool, fill the thumbprint-shaped indentation with pepper jelly.

Stand back. These cookies are REALLY GOOD.

Pour yourself a big glass of ice-cold milk, put a few of these cookies on a plate, and relax with a good book before you go to bed tonight.
