Around the Texas Pepper Jelly kitchen, we’re always testing new ideas, and every now and then, a recipe rises above the rest. Like this one! It’s the one our crew keeps asking for by name. Okay, so they don’t actually have a name…they are just the favorite. The “Can-you-make-those-again?” kind of favorite.

Sweet, spiced, and just the right amount of cozy, these muffins are packed with fresh fruit! Bananas and diced apples, and our secret ingredient – a splash of our Apple Cinnamon Sweet Rib Candy® to tie it all together. They’re really simple to make, full of flavor, and perfect for quick breakfasts, lunchbox treats, or an afternoon snack with tea or cocoa.

Here’s the recipe for the muffins 

Ingredients:Texsa Pepper Jelly bottle of Rib Candy Apple Cinnamon sweet

  • 2 cups flour
  • 1/4 cup sugar (you can use Truvia)
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt (Don’t leave it out!)
  • 1 cup milk
  • 1 beaten egg
  • 1/4 cup Apple Cinnamon Sweet Rib Candy
  • 1/3 cup vegetable oil (Don’t substitute butter or margarine!)
  • 2 mashed bananas
  • 1/2 cup peeled, finely diced apple
  • 1/2 cup chopped pecans or walnuts

What to do:

Preheat your oven to 400° F, and grease your muffin pans really well. (If you prefer, you can also use paper muffin cups) You’ll need at least 1-18 hole muffin tin for this recipe or 3-6 hole muffin tins.

In a large bowl, mix all of the ingredients. Your batter will be very lumpy, but be sure you’ve whisked all the sugar lumps away.

Fill each muffin cup half full.

Place pans in the oven and set your timer for 12 minutes. When the timer goes off, check for doneness with a toothpick; if done, remove from oven. If still a little sticky, let the muffins bake for another 3 minutes or so.

Reset the timer so you don’t forget about them…lesson learned!

Remove from oven. Step back. Your family will not be interested in giving them time to cool; they will start removing the muffins and eating them NOW. We like to spread butter on them, but some people like them plain. Although these muffins are by no means plain.
