No Name Muffins

Moist, cozy, and full of flavor! These banana apple muffins get a boost from our Apple Cinnamon Sweet Rib Candy for a sweet-spiced twist your whole family will love. Perfect for breakfast, snacking, or anytime comfort.

Ingredients
  

  • 2 cups Flour
  • 1/4 cup Sugar
  • 2 tbsp Brown Sugar
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • 1/2 tsp salt Don't leave this out!
  • 1 cup Milk
  • 1 Egg Beaten
  • 1/4 cup Apple Cinnamon Sweet Rib Candy
  • 1/3 cup Vegetable Oil Don’t substitute butter or margarine!
  • 2 Ripe Bananas Mashed
  • 1/2 cup Apple (any variety) Peeled and diced
  • 1/2 cup Pecans or walnuts Chopped (optional)

Equipment

  • 1 Large bowl
  • 1 Whisk
  • 1 Muffin Tin 18 hole (or 3-6 hole muffin tins)
  • 1 Spatula For scraping bowl
  • 1 Toothpick Testing muffin doneness
  • 1 Cooling rack
  • Vegetable Oil to oil pans
  • 18 Paper Muffin Cups Use these ONLY if you DON'T want to use vegetable oil

Method
 

  1. Preheat your oven to 400° F
  2. Grease your muffin pans really well
  3. In a large bowl, mix all of the ingredients. Your batter will be very lumpy, but be sure you’ve whisked all the sugar lumps away.
  4. Fill each muffin cup half full.
  5. Place pans in the oven and set your timer for 12 minutes.
  6. When the timer goes off, check for doneness with a toothpick; if done, remove from oven. If still a little sticky, let the muffins bake for another 3 minutes or so.
  7. Reset the timer so you don’t forget about them…lesson learned!
  8. Remove from oven. Place on cooling rack for 5 minutes.
  9. Remove from the muffin tin and serve!
