Texas Sweet-Heat Meatloaf

Ingredients
  

  • 2 lb ground beef
  • 1 cup Texas Pepper Jelly (any flavor)
  • 1 cup Craig’s BBQ Sauce
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 small onion finely diced
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
Meatball Sauce (if using the appetizer version)
  • 1 cup Texas Pepper Jelly
  • 1 cup Craig’s BBQ Sauce
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves

Method
 

MEATLOAF INSTRUCTIONS
  1. Preheat oven to 350°F.
  2. In a large bowl, combine ground beef, eggs, breadcrumbs, onion, garlic powder, salt, and pepper.

  3. Add Texas Pepper Jelly and Craig’s BBQ Sauce. Mix until just combined - don’t overwork it.
    1 cup Texas Pepper Jelly (any flavor), 1 cup Craig’s BBQ Sauce
  4. Shape into a loaf and place in a greased baking dish.
  5. Bake for 45 minutes, or until the internal temperature reaches 160°F.
  6. Let rest 10 minutes before slicing.
Meatball Sauce (optional)
  1. In a saucepan over medium heat, whisk together Texas Pepper Jelly, Craig’s BBQ Sauce, cinnamon, allspice, nutmeg, and cloves.
    1 cup Texas Pepper Jelly, 1 cup Craig’s BBQ Sauce, 1 tsp cinnamon, 1 tsp allspice, 1 tsp nutmeg, 1 tsp cloves
  2. Simmer for 5 minutes until glossy and thickened.
  3. Toss with cooked meatballs or drizzle over sliced meatloaf.
