Spicy Strawberry Crockpot Cake Recipe

Strawberry fans will go crazy for this unique take on a strawberry cake. Not only is it spicy, but it is also made in a crockpot (otherwise known as a slow cooker to some of you) making it one of the easiest cakes to ever bake.
You can dream about it all night while it bakes and you sleep. The aromas will surely enter your dreams.

  • Crockpot Liner/ if desired
  • Cutting board
  • Chef knife
  • Measuring cups
  • Sifter
  • Large mixing bowl
  • Spatula

Method
 

  1. Thickly butter the crockpot insert. You can use a crockpot bag liner. Using a bag helps take the cake out and display it, or you can serve it directly out of the crockpot.
  2. Dump the cake mix into a mixing bowl, (DON’T FOLLOW THEIR RECIPE ON THE BOX!)
  3. Add the four eggs, 1 stick of real butter, and 3/4 cup milk.
  4. Add the pepper jelly and diced strawberries.
  5. Pour mixture into buttered crockpot insert.
  6. Spread the sliced strawberries evenly on the top.
  7. Cover crockpot and set on low for 6 hours. The toothpick test will tell you if it’s done or not.

    If it isn't fully cooked at the 6-hour mark, let it stay on low until finished. Be sure to continue testing it every 15 minutes or so until the cake is done.
Chilling overnight in Refrigerator
  1. This cake doesn’t really need icing, but if your family loves icing, why not spread more strawberry habanero pepper jelly over the hot cake?
  2. While it’s still hot, iced or not, wrap the insert in foil, tightly. Put the wrapped insert into the refrigerator.
  3. In the morning, remove from fridge. Remove the cake from the crockpot insert and set it on a plate.
  4. Sprinkle some powdered sugar over the entire thing using a sifter. Then…dig in. You can also make a simple powdered sugar and water drizzle, which is really pretty and adds some sweetness.
  5. If you're not a powdered sugar fan whipped cream on this crockpot cake is amazing, too! The whipped cream makes it kind of like a strawberry shortcake.

Notes

You don't have to wait to enjoy this delicious strawberry crockpot cake to sweat overnight in the refrigerator. Seriously, you can go ahead and serve warm. Eat it while it is fresh and hot from the crockpot.
 
Allowing it to be set up overnight gives it a more firm texture. So, it’s really just a matter of how you prefer to enjoy it... oh, and allows the flavor-blending to happen overnight as well. But either way, you will enjoy this fantastic spicy strawberry cake!
