Glazed Apple-Chicken Stir Fry Recipe

This stir fry recipe is full of flavor. Like many of our recipes, we have incorporated our Texas Pepper Jelly Apple Habanero to give it the boost it needs.
Not only does it give the recipe great flavor, but the jelly also acts as the stir fry sauce cutting down the time it takes to create this dish.

  • 2 tbsp olive oil
  • 1 tsp curry powder any strength
  • garlic minced and qty to taste
  • 2 cups shredded cabbage
  • 1 cup carrots julienned
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • ½ cup sugar snap peas
  • 1 large apple peeled, cored, coarsely chopped
  • ½ cup Texas Pepper Jelly Apple Habanero
  • ¼ cup golden raisins
  • 3 cups Chicken breasts cubed or chicken thighs, chopped
  • 3 cups rice cooked, any kind
  • 1 green onion sliced
  • 1 pinch salt


Cook the chicken and rice

  • Heat 1 tbsp of the oil in a pan or wok over medium-high heat; add the chicken. Cook the chicken until done. Be sure it is cooked all the way through because you will only be warming it back up in the final steps.
  • Set cooked chicken aside.
  • If you haven't prepared the rice, do it while the chicken is cooking. Bring to a boil a large pot of water. Add a pinch of salt and add the rice. Cook to the directions on the package.

Prepare the stir fry

  • Heat the remaining tbsp of oil and curry in the same pan over high heat; add garlic to taste. Toss in the shredded cabbage, carrots, red and yellow bell pepper, sugar snap peas, and apple; stir and cook for five minutes. Then add pepper jelly and cook until the vegetables and apples are tender-crisp – just under ten minutes. Add more pepper jelly to taste.
  • Add the raisins and chicken and mix thoroughly. Add the rice and stir-fry for about five minutes, or until the cooked chicken is hot.
  • Garnish with the green onions or whatever you like (we like to toast sesame seeds for our garnish, but most people don't have these in their pantry so we didn't include it in the ingredients list), and serve while it’s hot.
