On the rare occasion you’ve cooked up too much for your crowd and find yourself with leftover beef brisket, bbq chicken, or pulled pork, don’t think it’s wasted food. As BBQ lovers, we know it doesn’t happen often, but we’ve all been there done that. Faced with mounds of meat, it’s either the garbage can or serve ’em up again — we vote for the latter. Need some leftover ideas? Here ya go:

 

Beef Brisket; Think Quesadillas, Grilled Cheese, and Pizza

Looking for some tasty ways to use leftover BBQ beef brisket? Start off with Spicy Beef Quesadillas!  Caramelized onions and peppers, bbq shredded brisket, along with melted gooey cheese wrapped up in a nice warm tortilla shell — yes, please. 

 

Think outside the wrap and go with a Brisket Grilled Cheese. Grill up some Texas toast with a few slices of leftover barbecue brisket, your favorite cheeses, and let your taste buds dance. Yum! 

 

How ’bout a BBQ brisket pizza? Get to eating fast with this recipe. Simply decorate up a frozen cheese pizza, slather on your favorite Craig’s BBQ sauce, lay down some thinly sliced red onion, sliced or shredded beef brisket, and gouda.  Bake according to package directions or until golden brown.

 

BBQ Chicken; Try Casseroles and Rollups

Leftover grilled chicken doesn’t have to be blah! Even incorporated into casseroles, chicken can shine without being boring. Try an easy Shredded BBQ Chicken Casserole that you can get on the table in under 30 minutes or a BBQ Chicken Pasta Bake that pairs leftover chicken with rigatoni, making it the perfect comfort food. 

 

Want something a little more finger food? Why not give BBQ Chicken rollups (or crescents as Pillsbury calls them). A bit of leftover chicken, refrigerated rolls, and shredded cheese can satisfy your brood at dinner time or snack time.

 

Pulled Pork; Mix it Up with Cornbread, Egg Rolls, and Empanadas

Pork is a versatile meat and can be used in any number of dishes. One quick Tex-Mex recipe that lets leftover pulled pork and baked beans shine is Food Network’s Pulled Pork Skillet with Cheesy Jalapeno Cornbread. Easy, peasy dinner in under 30 minutes. 

 

If you’re looking for an Asain twist on leftover pulled pork, try making some Baked or Fried Pulled Pork Egg Rolls from Spruce Eats. Got leftover veggies from your BBQ chop ’em up and throw them into your egg rolls!

 

Although a bit more time-consuming, BBQ Pulled Pork Empanadas are to die for. While the recipe from Spruce Eats shares how to make the dough from scratch, you can always cheat and use pre-rolled pie crust.

 

Last but not least, you can use any one of the meats in a BBQ Nachos recipe. Just sub out whatever the recipe is calling for, and voila, leftovers reincarnated without the boredom.
