11 Feb What’s Cookin’ Wednesday: Pineapple Jello Salad
- Sometimes, it takes an ingredient that most people would consider “odd” to turn a dish from something ordinary into something FANTASTIC!
Try this Pineapple Jello Salad at your next get-together. It’s not your grandmothers Jello Salad, that’s for sure!
One large package of lime Jello-O, or two small packages
2 1/2 cups VERY hot water
1 12-oz can of crushed pineapple, mostly drained
1/4 cup Pineapple Habanero Texas Pepper Jelly
1 cup Miracle Whip or mayonnaise ( I like it with Miracle Whip better, but you might be different!)
2 cups cottage cheese (small or large curd, which you like best. I like the small curd better.)
Dissolve the lime Jell-O in the hot water. Chill until PARTLY set.
Mix the Jello and all the other ingredients in a large bowl. Pour into a mold or casserole dish and chill until firm.
“Frost” with Cool-Whip or whipped cream, if desired. Serve proudly. Don’t count on any leftovers.
