Texas Pepper Jelly: Sauces, Jellies, Rubs, Injections, and Fillet Knives

So, you’re stocking up on your grilling supplies. . . filling your pantry shelves with grilling sauces, BBQ sauces, dipping sauces, pepper jellies, rubs, injections. . . .and you’re sure you’re ready for the summer’s grillings. Have you checked out your knives yet? A good filet knife can make your cookout prep a lot easier. Texas Pepper Jelly is proud to carry Messermeister knives, and their Park Plaza filet knife is the best you’ll ever find and use.

Cookouts are a way of life for many people, and no summer gathering is complete without one. There’s something about eating in the house when the sun is shining and the breeze is blowing softly that is just, well, wrong. This weather was made for eating outside.

Balancing a paper plate of delicious food is what summer is all about. Isn’t that why we have knees in the first place? And no food, not even Thanksgiving dinner, can beat a summer cookout and the food that comes off that grill.

My neighbors are grilling already, many of them, in fact. When I get home from work around 7 p.m., the neighborhood smells so good I can hardly walk into the house from my car. The smell of good barbecue is unequaled in the annals of cookbook aromas.

We’re having a family reunion for Mother’s Day on Sunday afternoon. We’re all bringing picnic food, in spite of the thunderstorm forecast. The main dish is spiral baked ham, and the glaze, which MAKES the ham, is straight from the cookbooks of Texas Pepper Jelly. Why? Because that’s the best one!

We’re also having Pineapple Sweet Fire Potato Salad and the BIG crockpot full of Texas Partytime Beans.

For dessert we’re having dark chocolate cake because it’s my nephew’s birthday. But we’ve got a lot of Texas Pepper Jelly to spoon over the ice cream!

Happy Mother’s Day to all of our readers, because some of you ARE mothers, and the rest of you HAVE mothers.

You Need A Texas Pepper Jelly T-Shirt!

Texas Pepper Jelly has the perfect t-shirt for your summer grilling – our awesome shirts come in all sizes from Large to 5X, and in three bright colors: pink, red, and sport grey!

Most licensed t-shirts are expensive, but Texas Pepper Jelly’s t-shirts are only $15.00, and they’re made of 100% pre-shrunk cotton. Throw them into the dryer – they’ll be the same size when they come back out! We accept several payment types, including PayPal!

Our t-shirts are so popular that sometimes a particular size/color combo is out of stock, but if you get that message, please try again in a few days. We WANT you to have one of our awesome T-shirts, and we’ll have your size later, if we don’t have it right now.

Mine is pink.

I wear it whenever we grill out in the summer, and I’ve already worn it twice this spring. This weekend it’s going to freeze again, but where I live, the seasons change every five minutes, and in a few days it’ll be warm again.

My Texas Pepper Jelly shirt is my favorite t-shirt, and just seeing it makes me think of the awesome products I’ve stocked my pantry with in preparation for official grilling-out season.

I’ve got several flavors of pepper jelly, two jars of Loco Cheese Dip, three bottles of Rib Candy, and a jar of Pineapple Sweet Fire Pickles, so far, and I’m not done ordering yet. Besides, I can’t keep any of Texas Pepper Jelly’s products IN my pantry for more than a few days, because my family is crazy about them and when everybody’s home, things mysteriously disappear.

P.S. Those Pineapple Sweet Fire Pickles are really good. They’re also on sale right now.

P.P.S. Did I mention that those pickles are really good? Holy cow, SO GOOD!

P.P.P.S. The Loco Cheese Dip is on sale, too. I might need to order some more of that right now – my son is here and I spotted him eating something an hour or so ago, and I suspect that he found my Loco Cheese Dip. . .

Texas New Year’s Feast: Hoppin’ John & Skippin’ Jenny, Festive Style

Texas Pepper Jelly, Texas Rib Candy, New Year's hoppin john For those of us who live in the South, Hoppin’ John is a traditional New Year’s Day repast. For those of you who live in the North, you’ve got a real treat in store!

The origin of Hoppin’ John for New Year’s Day has many scholars arguing. Most agree that the southern laves liked to make and eat it in memory of Africa, where dishes made of beans and rice or other grains were easy to get and popular. Others say that Hoppin’ John became popular because it is so easy and economical to make, as well as delicious to eat. I’m betting that it’s really a combination of these and other things.

All we really need to know is that Hoppin’ John, complete with its folklore ( black-eyed peas for luck, etc.) IS easy to make, inexpensive, and really, really tasty. This crockpot version makes a simple recipe even easier!

Ingredients:

4 cans black-eyed peas, thoroughly drained and rinsed and drained again
4 cups chicken or turkey broth
1 package smoked sausage mini-links
1 can diced tomatoes
1/2 cup Texas Pepper Jelly’s Pomegranate Cranberry Habanero Rib Candy
1 cup finely chopped onion
1 bunch collard greens, rinsed, drained, and chopped
1/2 teaspoon salt
1/2 teaspoon bacon grease
1/4 teaspoon black pepper
1/4 cup dried cranberries (craisins)
2 cups cooked quinoa, brown rice, or really any grain your family likes

What to do:

Put the drained black-eyed peas, broth, and sausage in your crockpot. Stir in all the other ingredients (except the grains) and stir thoroughly. Cover and cook on low for 8-10 hours. I usually fill the crockpot before bedtime and let it cook all night, for lunch. For dinner, fill the slow cooker early in the morning and let it cook all day.

Serve over your grains of choice. I like to use brown rice, but my husband likes quinoa.

Happy New Year from Texas Pepper Jelly!

P.S. If there’s any left over and you serve it for supper the next day, it’s not Hoppin’ John any more. Leftover, it’s Skippin’ Jenny.

Spicy Supreme Meatloaf of the Gods

Monday Munchies, spicy recipes, Texas Pepper Jelly Meatloaf lovers, rejoice, for the weather is starting to chill and it’s fast becoming perfect meatloaf time!

Speaking of perfect meatloaf. . . Texas Pepper Jelly has it. Seriously. Our meat loaf will challenge you mom’s meatloaf and WIN.

Ingredients:

1 1/2 cups chopped onion
1 tablespoon garlic powder
3 large eggs
1/4 cup milk
1 teaspoon dijon mustard
1/4 cup Apple Habanero pepper jelly
1/4 cup finely chopped apple, or applesauce
1/4 cup diced green pepper
1 pound extra lean ground beef
1 pound sausage
1 1/2 cups bread crumbs or ground-up soda crackers
1/4 cup ketchup
1/4 cup Apple Habanero Rib Candy
1/4 cup brown sugar
dash salt
dash black pepper
dash marjoram
1 tablespoon cider vinegar

What to do:

Preheat your oven to 350.

In a large mixing bowl, mix together the eggs, milk, mustard, apples, green pepper, and pepper jelly. Add the salt, pepper, and marjoram. Blend thoroughly. Add the meats, bread crumbs, milk, and onions. Use your hands to mix it up well.

In a small bowl, stir together the ketchup, Rib Candy, sugar, and vinegar.

Transfer the meat mixture to a large loaf pan. Brush the meat, all over, with the Rib Candy/ketchup/sugar/vinegar mixture. Use about half the marinade mixture.

Bake for about 45 minutes. Remove from oven and brush with more glaze. Return to oven and bake another 15 minutes. Remove from oven and brush with remaining glaze. Return to oven for approximately 10 more minutes, or however long it takes for that final glaze to “set.”

Let the meat loaf settle before slicing.

It’s so good. I want some RIGHT NOW.

Spicy Holiday Apple-Cranberry Sauce

Monday Munchies, spicy recipes, Texas Pepper Jelly Autumn is officially here, and it’s time to start thinking about holiday recipes for all those company and family dinners we’ll be cooking soon.

Spicy Holiday Apple-Cranberry Sauce is a perfect accompaniment or side dish for a holiday dinner or for a leisurely family dinner. It’s easy to make, nutritious, and packs a little wallop that will make your guests or family beg for more!

Ingredients:

6 large Granny Smith apples, peeled and diced (don’t use sweet apples!)
1 package (12 oz) fresh cranberries (don’t use frozen)
1 lemon, seeded and sliced very thin
1/4 cup Pomegranate Cranberry Habanero Rib Candy
1/4 cup Apple Habanero Pepper Jelly
1 1/2 cup sugar
1/ cup water
1 cup sweetened dried cranberries (sometimes called “craisins.”)

What to do:

In a large saucepan, bring the apples, cranberries, lemon, sugar, water, and Rib Candy to a boil over low heat, stirring constantly.

Reduce heat and simmer for about 15 minutes. When the cranberries pop, remove from the heat and add the pepper jelly and craisins. Keep stirring; don’t let the mixture stick.

Cool and chill until ready to serve. This dish can be stored in the refrigerator for 2 weeks or more, and in the freezer for a year or more.

Don’t count on any leftovers.

This recipe contains several “strong” ingredients. You might want to make it several times, modifying amounts, etc, for “practice” before Thanksgiving. Some people don’t like the lemon in it, but my family loves it.

This recipe is awesome on ice cream. I might have experimented with cake, too. And maybe a bagel.

Oh my gosh, the bagels were outstanding with this stuff on them. . . .

Pineapple Sweet Fire Pickles: A Strom’s Best Friend!

Texas Pepper Jelly, Pineapple Sweet Fire Pickles My husband’s favorite sandwich is a Strom, loaded with half a salad bar, plus tomato sauce. He used to like a local restaurant’s Strom best, but those days are over.

Now, he likes the Stroms I make for him at home. There are several reasons for this.

Firstly, I use fresh ingredients. The sausage, cheeses, vegetables, etc, are all market fresh.

Secondly, I use Texas Pepper Jelly’s Rib Candy instead of tomato or spaghetti sauce.

Now, a person can’t eat a Strom without bread-and-butter pickles, and my husbandTexas Pineapple Sweet Fire pickles and sandwich used to like the regular ones that he got at the restaurants.

He doesn’t like those much any more, because he’s used to eating Texas Pepper Jelly’s Pineapple Sweet Fire bread-and-butter pickles with his stroms. I know why, too.

Pineapple Sweet Fire Pickles are just simply the most delicious pickles any of us have ever experienced, and we’re BIG pickle-lovers here.

Try them yourself. Texas Pepper Jelly’s Pineapple Sweet Fire pickles are the most awesome bread-and-butter pickles you’ll ever experience. No exaggeration, either.

I eat them straight out of the jar, but my husband prefers them with a sandwich, and preferably the sandwich will be a Strom. Stroms are, technically, an Italian sandwich, but they’re still way better with Rib Candy and Pineapple Sweet Fire than the usual way.

Honest.

Texas Crockpot Apple Butter

crockpot, hot summer cooking, pepper jelly, It’s still really hot outside, and firing up the oven will just make your house fight with Mother Nature, so your crockpot is still a hot summer’s best kitchen friend!

This recipe for Texas Crockpot Apple Butter is super easy and SUPER DELICIOUS, and your family will love it.

I always begin this process right before bedtime. There’s nothing like dreaming while wonderful aromas waft all through the house. . . .

Ingredients:

1 dozen apples, peeled, cored, cubed
1/4 Cup Water
1/4 cup Apple Habanero Rib Candy
1/4 Cup Brown Sugar
1/2 teaspoon Cinnamon
1/2 teaspoon All Spice

What to do:

Toss all of the above into your crockpot, mix well, put the lid on it, set it on “low,” and go to bed.

When you get up in the morning, give it a stir and replace the lid, but put a spoon under the lid so it’s vented JUST A LITTLE BIT. Go on to work.

When you get home, remove the lid and give it another stir. It’s still quite lumpy, but that’s how my kids like it best. My husband, however, wants apple butter to be smooth and lump-less, like, you know, butter. So for him, I either whisk away the lumps or, if the lumps are stubborn (it depends on the kind of apples you used!) I pour it into the blender.

It’s now ready to eat, and you’ll have to slap hands away from it or they’ll be scooping it right out of the jars you’ve poured it into. Freeze some of it and put the rest in the refrigerator, if you can pry it out of your family’s hands.

This is fantastic fresh homemade apple butter with a Texas kick to it. You’ll not find anything like this in a store. Fortunately, it’s easy to make!

Texas Chicken Wraps

Monday Munchies, spicy recipes, Texas Pepper Jelly Texas Chicken Wraps are a quick, nutritious meal, and you can use up several leftovers in the making!

Ingredients:

6 flour tortillas (soft)
1/2 teaspoon garlic powder
dash of black pepper
12 oz. of skinless, boneless chicken breast strips (sliced VERY thin)
1 tablespoon olive oil
4 cups shredded broccoli or broccoli slaw mix
1 medium onion, cut into very thin wedges
Texas Pepper Jelly, any flavor
Texas Rib Candy, any flavor

What to do:

In a medium mixing bowl, combine the chicken, garlic powder, and pepper, tossing to coat evenly.

In a large skillet, heat the oil. Cook and stir seasoned chicken for 2-3 minutes or until no longer pink and raw-looking. Add the broccoli and onion to the skillet; cook and stir for 2-3 minutes. Remove from heat.

Now for the assembly – your family might want to help with this part! Spread each tortilla with a tablespoon of pepper jelly OR Rib Candy; alternate so there will be CHOICES!

Top with chicken strips and vegetable mixture. Roll up each tortilla, securing with a toothpick. If desired, heat in microwave for just a minute or two.

Serve immediately, with pepper jelly and rib candy. Everybody will need a spoon. :)

You can use almost any shredded vegetable with this recipe; I’ve used green beans, corn, peas, okra. . . really, whatever leftovers you’ve got in the refrigerator will work, and using different vegetables makes this recipe into a different experience each time! Using different pepper jelly flavors makes this meal an adventure, too.

You’ll need a good sharp knife for all this vegetable and chicken shredding. Why not get one of our fantastic Messermeister knives; they’re guaranteed to do a wonderful job!
