SuperBowl Food: Texas-Style Cheesy Chicken Dip! (Crockpot Style!)

You can’t have too many dips at your SuperBowl party, and that’s not even counting your in-laws!

Texas Pepper Jelly’s Texas-Style Cheesy Chicken Dip will become one of the hits of the evening, along with all those painful tackles you’ll all be watching on the big screen. . . .

Ingredients:

One 8-oz package of cream cheese (I use Neufchatel) – softened
1/2 cup of ranch dressing
1/4 cup of Spicy Peach Grilling Sauce
1/4 cup finely diced peaches
1/2 cup crumbled mozzarella cheese
1 cup shredded cheddar cheese
2 cups finely shredded cooked chicken

What to do:

Sunday morning, get out your crockpot, and preheat it on low.

Stir the cream cheese in a medium bowl with the dressing, grilling sauce, and mozzarella cheese. Stir in the shredded chicken and mix well.

Put this mixture in your crockpot, cover with the shredded Cheddar cheese, and turn it on High. Let the mixture cook until bubbly. Once the mixture bubbles and the cheddar cheese browns, turn crockpot to low and let it wait for your guests to arrive – it’s ready to eat any time now. Stir, and serve with chips, veggies, breadsticks, or whatever you wish to DIP!

SuperBowl Food – Texas Style! SuperBowl Sliders!

Texas pepper Jelly super bowl food

Looking for the best SuperBowl food? You’re at the right place! Texas Pepper Jelly’s recipes are almost ALL well-suited for your couch football fans, and our favorites are featured right here!

Click that link up there and you won’t need to search anywhere else for awesomely good, spicy football food.

And while we’re talking about SuperBowl food, let’s just add this to the list of sure-fire couch-pleasers:

SuperBowl Sliders! (YOu know – miniature cheeseburgers!)

Ingredients:

4 pounds ground beef
5 large onions, cut into rings
1 jar Loco Cheese Dip
Two packages of dinner rolls, approximately 2 dozen rolls
Condiments as desired

What to do:

Form the ground beef into small patties, about 3 inches in diameter
In a large frying pan, lay the onion circles in the pan, and put the hamburger patties on top of the onions. Don’t worry about making them even. Fry the hamburger patties on medium-low heat, turning several times to insure doneness but not burning. The onions will carmelize and “share their wealth” with the hamburger. When the burgers are done, scoop them up, along with the onions, and put one patty on the bottom half of a split dinner roll. Generously spread Loco Cheese Dip over the burger, and replace the top bun. Put the cooked onions in a bowl- they’ll be a condiment. Each time you take up a batch of burgers, replace the cooked onions with fresh-cut.

football food, Loco Cheese slidersWhen you’ve got a huge platter of Loco Cheese Dip-covered mini-burgers-on-a-dinner-roll, bring it into the TV room, put it on the coffee table along with whatever condiments (don’t forget the onions!) your crew wants.

Then, stand back. Or take your place on the couch and grab a slider yourself. Football isn’t only for the guys, you know.

My husband refers to SuperBowl Sliders as “a man’s hors d’oeuvres,” and he just might be right!

He also wanted me to tell you that you can’t fix too many of these. However many you make, they’ll devour.

Strawberry Habanero Cake! A Superbowl Specialty!

Texas Pepper Jelly cake It’s still winter, of course, but it won’t be all that long until spring, and with the spring come the strawberries!

Our Strawberry Habanero cake will turn your simple dinner dessert into a real party! And did I mention that it’s unbelievably delicious?!

You can, of course, make the cake completely from scratch, but our version is a lot easier!

Ingredients:

1 strawberry cake mix
2 eggs
1/8 cup oil
1/4 cup Strawberry Habanero pepper jellyTexas Pepper Jelly Strawberry Habanero
1/4 cup water
1 cup sliced strawberries
1 can strawberry icing, or make your own.

What to do:

In a large mixing bowl, combine all ingredients except the sliced strawberries and icing, and mix well. Pour into two buttered layer cake pans, and bake for approximately 32 minutes. When your toothpick comes out clean, your cake is done.

Let the cakes cool. Turn one layer upside-down onto a plate and frost thickly. Turn the other layer right-side-up on top of the first layer, and frost completely. Cover frosting with sliced strawberries.

I usually let the cake chill in the refrigerator for an hour or two before I serve it. It’s great with ice cream! I also like to mix a tablespoon of Strawberry Habanero pepper jelly in the icing before I start frosting the cake. Your call.

Strawberry Habanero Cake is a perfect Superbowl Party food!

Super Bowl Corn Dip: Texas Spicy!

Texas pepper Jelly super bowl food Texas Pepper Jelly’s Super Bowl Corn Dip is so full of good food, it’s as good as a meal! Be sure to have plenty of crackers, breads, raw veggies, etc, on hand!

Ingredients:

3 cans of corn – mix ‘em up! Just make sure one of them is whole yellow corn. Drain!
2 cans diced tomatoes
1/4 cup diced green chilies
Juice of a whole lime (lemon works, too)
1 cup finely chopped onion – any kind
1/2 cup peeled chopped apple
1/4 cup chopped fresh cilantro
1 minced jalapeno pepper – more or less. Adjust for spiciness preferences!
1 1/2 cups shredded cheddar cheese
1 cups shredded any-other-kind-of-cheese
1/2 cup Loco Cheese Dip

1 8-oz package of softened cream cheese (I use Neufchatel)
1 cup mayonnaise (Miracle Whip works)
1 cup sour cream (don’t use low-fat)
1/4 cup Texas Apple Habanero Rib Candy
Dash of garlic powder

What to do:

Preheat your oven to 350. Grease a large casserole pan. (Don’t use a buttery spray)

In a very large bowl, combine everything except the last five ingredients. In a medium bowl, combine the remaining five ingredients, beating until smooth and creamy.

Pour the creamy mixture into the large bowl, and stir until very thoroughly combined.

Spoon this final mixture into your greased casserole dish and bake for 25 minutes, stir thoroughly, and bake for another 20 minutes. The top should appear lightly browned.

Let it cool for 15 minutes or so, and serve. It’s probably a good idea to place a folded towel on your coffee table so nothing gets burned or scratched – this casserole dish is going to get quite a workout!

This dip will keep for a week in the refrigerator, and does really well in the microwave.

P.S. You can make this dip in your crockpot, too. Just throw it all in, turn the dial to “low,” go to work/church/the mall/nap/etc, and when you get home 6-8 hours later, it’ll be ready!

Super Bowl Meatloaf: Stop Laughing & Have A Sandwich!

Texas pepper Jelly super bowl food Oh hush. You know you love a good meatloaf sandwich, and Texas Pepper Jelly’s Spicy SuperBowl Meatloaf is the best EVER.

Texas pepper jelly meatloaf, football foodThis recipe makes awesome meatloaf – fit for your family dinner table – but this weekend it will be easier to just slice it up and turn it into the kind of sandwich that will bring all the neighbors to your sofa.

Ingredients:

3 pounds hamburger
1 1/4 cup dry bread crumbs ( cracker crumbs work, too; that’s what I use)
1/4 cup chopped onion
1/4 cup chopped green pepper
3/4 cup nonfat dry milk
1/2 cup Texas Rib Candy
1/4 cup water
1/2 cup ketchup
4 large eggs
1 tablespoon garlic powder (not garlic salt!)
1 teaspoon black pepper
1/4 teaspoon salt (if you use cracker crumbs, omit the salt)

What to do:

Preheat your oven to 375.

In a large bowl, combine all but 2 tablespoons of the ketchup, and mix thoroughly – use your hands. Divide the mixture into two “loaves,” and place in ungreased baking pan. Don’t use a flat cookie-type pan; your pan must have sides. Cover the tops of both loaves with the remaining ketchup.

Bake for approximately an hour. When your timer goes off, check to make sure your loaves do NOT have pink centers.

Let the loaves stand for at least a half hour before slicing. In fact, if you make them the day before, they slice a lot better cold.

Most people do not need any condiments with these sandwiches, but since a few will, set out some ketchup, mustard, pickles, etc. Eat ‘em up.

Texas pepper Jelly super bowl food There’s nothing like a big bowl of awesome dip and all kinds of crackers, chips, and raw veggies, when you’re sitting on the couch with family and friends, enthusiastically watching a good football game, is there. . .

Well, here’s one of the best recipes for a great dip that you’ll ever find. It’s easy, too! And, it goes great with anything dip-able!

Ingredients:

1/3 pound chopped turkey
1/3 pound chopped pepperoni
1/4 pound chopped ham
1/4 cup chopped provolone cheese
1/4 cup chopped cheddar cheese (Loco Cheese Dip makes it even better!)
1/2 cup chopped onion

SuperBowl Food: Spicy Veggie Burgers

Texas pepper Jelly super bowl food I know what you’re going to say – “my family won’t eat a veggie burger; they want MEAT.”

And here’s what I’m going to say about that: “That’s because they haven’t tasted Texas Pepper Jelly’s Spicy Veggie Burgers yet!”

I’m not kidding; our Spicy Veggie Burgers are drop dead delicious, and your football fan family will be asking for them all year long.

Item: you’ll need a food processor for this recipe.

Ingredients:

4 cups cooked black beans, rinsed and very thoroughly drained (canned is fine)
1 large onion, sliced
1 large green pepper, seeded and sliced
3/4 cup sliced mushrooms (canned is fine)
2 Tbsp. garlic buds or garlic powder, or 3 cloves
3/4 cup mozzarella cheese, shredded
2 large eggs
1 TBSP ground cumin
1/4 cup Texas Rib Candy – any flavor – experiment!
1/2 cup dry bread crumbs or cracker crumbs (estimation)

1/2 cup uncooked brown rice
1 cup water

What to do:

The first thing to do is to put the water and brown rice in a medium-sized saucepan and bring them to a boil. Cover, and lower the heat to simmer. Simmer until the rice is tender and all the water has been absorbed; this should take a little over a half hour.

These burgers can be grilled outdoors or baked in your oven. Let the weather make this decision for you!

If you’re going to grill, preheat your grill to high. Put a lightly oiled piece of foil on your grill.

If you’re going to bake the burgers in your oven, preheat it to 375 and oil a baking sheet.

Mash the black beans in a LARGE bowl, and set the bowl aside.

Put the green pepper, onion, mushrooms, and garlic in your food processor and chop finely. Stir this mixture into the black bean mixture. Now put the brown rice and chese in the processor, and process until combined Stir this mixture into the black beans, also.

Mix together the eggs, cumin, and Rib Candy, and mix this into the black beans. Fold in the bread or cracker crumbs – you might need less or more, to make the patties firm.

Form the burgers; if you like them large, this recipe will make about six; if you prefer smaller burgers, this recipe will yield a few more.

Put the patties on the grill, on top of the foil, and grill until browned and hot all the way through. This should take about 7-9 minutes per side.

If you’re baking them in the oven, put the patties on the oiled baking sheet and bake about 10 minutes; then turn the patties over and give the other side about 6 minutes.

These times vary with different ovens and grills; use your judgment.

These burgers are so good, my family doesn’t even use tomatoes, pickles, lettuce, etc. However, it’s probably a good idea to have some condiments read. My son just puts more Rib Candy on his.

If you’ve got a crowd on your couch, watching the football game, you might need to double this recipe.

Don’t forget to buy a lot of buns!

Superbowl Special: Spicy Sloppy Joes

While the game is at its peak (like right this minute!) take a little time to tiptoe to the kitchen and throw together some Spicy Sloppy Joes for your Superbowl Couch Guests! It’s so easy and only takes a few minutes, even if you’re starting with raw hamburger!

Ingredients:

2 pounds hamburger, and you need to cook it up if you haven’t already
1/4 cup ketchup
1/4 cup Texas Rib Candy
1/8 cup shredded onion
1/8 cup shredded green pepper
1 tbsp. chili powder
Dash salt, if you must
Dash pepper

What to do:

Drain the ground beef well, and then add all the other ingredients to the pan the stir. Let ingredients cook together for a few minutes, and then pile it onto buns.

If you put it on hamburger buns, you can call it Spanish Hamburger, and if you pile it on hot dog buns, on the hot dot, you can call it a Coney.
