Texas Crockpot Apple Butter

crockpot, hot summer cooking, pepper jelly, It’s still really hot outside, and firing up the oven will just make your house fight with Mother Nature, so your crockpot is still a hot summer’s best kitchen friend!

This recipe for Texas Crockpot Apple Butter is super easy and SUPER DELICIOUS, and your family will love it.

I always begin this process right before bedtime. There’s nothing like dreaming while wonderful aromas waft all through the house. . . .

Ingredients:

1 dozen apples, peeled, cored, cubed
1/4 Cup Water
1/4 cup Apple Habanero Rib Candy
1/4 Cup Brown Sugar
1/2 teaspoon Cinnamon
1/2 teaspoon All Spice

What to do:

Toss all of the above into your crockpot, mix well, put the lid on it, set it on “low,” and go to bed.

When you get up in the morning, give it a stir and replace the lid, but put a spoon under the lid so it’s vented JUST A LITTLE BIT. Go on to work.

When you get home, remove the lid and give it another stir. It’s still quite lumpy, but that’s how my kids like it best. My husband, however, wants apple butter to be smooth and lump-less, like, you know, butter. So for him, I either whisk away the lumps or, if the lumps are stubborn (it depends on the kind of apples you used!) I pour it into the blender.

It’s now ready to eat, and you’ll have to slap hands away from it or they’ll be scooping it right out of the jars you’ve poured it into. Freeze some of it and put the rest in the refrigerator, if you can pry it out of your family’s hands.

This is fantastic fresh homemade apple butter with a Texas kick to it. You’ll not find anything like this in a store. Fortunately, it’s easy to make!

Texas Pepper Jelly: Award-Winning, Delicious, and Versatile!

Texas Pepper Jelly In most places now, it’s official: the weather has turned! This means many things, of course, but the best of all is that it’s cookout season for sure!

The March winds blew the cover and all the spatulas and hot pads off the deck and into the woods, but bit by bit we’re finding them. Spatulas and tongs aren’t all that important, though; heck, to make a cookout a success, all you need is some Texas Pepper Jelly products.

Craig Sharry, the Texas Pepper Jelly Big Boss, knows his stuff when it comes to barbecue and grilling in any aspect. He’s a several-times-over barbecue champion – you may have read his name recently when he became the Grand Champion Overall at the World Championship BBQ Cookoff for the Houston Livestock Show & Rodeo. Craig’s briskets blew all the other entries out of the water; or, should I say, off the grill? (He won Champion Brisket, too!)

So why not use the products of champions at YOUR cookouts this summer? I do.

Monday Munchies: Breakfast Nachos

My family loves breakfast, and they especially love a breakfast that’s a bit on the “nontraditional” side.  Bacon and eggs are well and good, but this recipe for Breakfast Nachos is one of their all-time favorites!  It’s the Texas Habanero Salsa that makes it so good!

Ingredients:

1 3/4 cups refried beans

4 cups tortilla chips

4 eggs, scrambled

1 1/2 cups shredded cheese, whatever your family likes best.  I usually use cheddar, or that taco cheese.  My sister uses Monterey Jack.

1/4 cup sliced jalapeno peppers

1 cup cooked, crumbled sauge or bacon – or both!  Ham works, too.

Sour cream

1 jar Texas habanero salsa habsalsasm

What to do:

Spread the refried beans over the bottom of a large pan.  Arrange the chips over the beans.  Arrange the scrambled eggs, cheese, and jalapeno peppers over this.

Broil for about 2 minutes, or until the cheese is melted.  Watch it carefully!

Top with salsa, sour cream, breakfast meat (optional) and anything else your family likes!  I use diced onions and guacamole, and you can use anything else your kids want!

Dig in.  There won’t be any leftovers.

Texas Habanero Salsa – In The CHILI!

Chili is such a versatile food; it’s always welcome on cold nights, and it’s an excellent way to use up some leftovers because there really isn’t much you CAN’T put in a pot of chili, as long as the seasoning is right.

We had chili for supper tonight, and when I make chili, I make it in a huge pot because I haven’t learned how to cook without taking into account the children’s appetites yet.  The children are grown up and living on their own, but my pots of chili are still huge.  That’s okay, though, really, because chili is one of those foods that improves with re-heating.

There wasn’t as much chili left after tonight’s supper, though.  That’s because it was the best-tasting chili that’s ever been in my house.  What made it so extra-yummy?  The jar of Texas Gourmet Habanero Salsa I dumped into the pot, that’s what.

That jar of Texas Gourmet Habanero Salsa made such a positive difference, it was unbelievable!  I mean, my chili was always pretty good, but tonight it was DELICIOUS.

Try adding a jar of Habanero Salsa to your pot of chili.  I’m serious; that chili was so good, my husband didn’t even WANT his usual grilled cheese sandwich accompaniment-to-chili; he just wanted more chili.

What’s Cookin’ Wednesday

Southwestern Corn Dip

Oh, this one is SOOOO GOOD!  I’m making this for an appetizer on Thanksgiving!

You’ll need the following ingredients to make enough for thirty people:

1lb of cheese – I use Velveeta, but any kind of yellow cheese will do.  If you have a lot of tag ends of cheese in your refrigerator, this is a good way to use them up.

1 can of corn, well-drained

1 onion, finely chopped

1 cup of Habanero Salsa

1/2 cup sour cream

1/2 cup fresh cilantro, finely chopped

Mix the cheese and corn in a large microwaveable bowl.  Microwave on high about five minutes or until cheese is melted.  Stir occasionally.

Mix in all the other ingredients.

Serve hot with any kind of crackers or raw vegetables that you want.  This dip goes with everything.  This recipe makes enough for a small party or family reunion.

For a smaller amount of dip, just halve everything and cut your microwave time to 3 or 5 minutes.  As always, watch any cheese carefully in your microwave.
