Pineapple Sweet Fire Potato Salad

pepper jelly, feast, fridays, spicy goodnessNever worry about what to bring to your next family reunion or workplace pitch-in again, because Texas Pepper Jelly’s awesome Pineapple Sweet Fire Potato Salad is about to become your very best friend. This big bowl of potato salad will make any crowd forget all about anything anybody else may have brought to the table. Our Pineapple Sweet Fire pickles and pepper add more than just a touch of spicy goodness to this potato salad. Just you wait. . . .

Ingredients:

10 large potatoes, peeled, cubed, boiled, and drained
1 green pepper, diced
1 red pepper, diced
1 large onion, diced
4 boiled eggs, 3 of them chopped
2/3 cup mayonnaise or Miracle Whip
1 tablespoon cheap yellow mustard
1 cup Texas Sweet Fire pickles & peppers, diced

What to do:

Mix everything except the non-chopped egg together and put it in a nice big bowl. Slice the remaining boiled egg and arrange the slices on top of the salad. Sprinkle with a little paprika. Cover tightly and store it in the refrigerator until just before serving.

When it’s time to eat, remove the cover and set the bowl on the table.

Stand back.

A Feast of Fridays: Spicy Cheese Ball. Or Log. Etc.

feastoffridays I’ve posted about cheese balls before, but spring is coming soon, in spite of the snow some of us are still dealing with, and spring is the season of all kinds of pitch-ins and open houses – St. Patrick’s, Easter, graduation. . . . etc, and at pitch-ins, people look for cheese balls.

Now, this recipe might seem a bit different. That’s because it is! It’s different in that it’s a lot yummier than plain old cheeseballs people stop by the grocery store deli to run in and buy because they don’t know how to make a cheese ball from scratch.

That won’t be you this spring! Our spicy cheese ball is easy to throw together and will be easy to find on the pitch-in table. Just follow the crowd.

Ingredients:

5 ounces of blue cheese, room temperature

2 ounces of shredded Gouda cheese

8 ounces of cream cheese, softened

10 ounces of sharp processed cheese food

1 Tbs. of Feta cheese

1 tsp. garlic salt

1/4 cup finely chopped onion

One 1.5-ounce jar of any flavor of Texas Pepper Jelly you have on hand

1/2 cup chopped pecans

Directions:

In a large bowl, combine all of the cheeses, the garlic salt, onion, and the Texas Pepper Jelly. Mix well. Cover bowl tightly with Saran Wrap and put it in the refrigerator for a few hours, or overnight.

When mixture is firm, shape it, with your well-washed hands, into a log or ball. Roll the log or ball in the chopped nuts.

Put the cheese log/ball on a pretty tray, and surround it with assorted crackers. Put the tray on the table and stand back. You might get trampled in the mad rush that will surely follow!

(You can shape this into any form you like, actually; you can even put it in a mold and turn it out onto the plate shaped like a clover or whatever, but I think it’s easier to scoop it up with crackers if it’s shaped like a log.)

Sweet and Sour Meatballs, Texas Pepper Jelly Style

The department is having a pitch-in tomorrow, and guess what I’m bringing!

Sweet and sour meatballs, made with Texas Pepper Jelly!

I used to make sweet and sour meatballs with BBQ sauce and apricot jam, along with a dash of nutmeg, cinnamon, cloves, allspice, and a tiny little bit of onion powder.  I probably won’t bother with that recipe any more, though.

Tonight, I made sweet and sour meatballs with BBQ sauce and Berry Medley Texas Pepper Jelly, along with a dash of nutmeg, cinnamon, cloves, allspice, and a diced onion.  My house smells so good, I’m sure the neighbors will be pounding on the door demanding a bite of “whatever is in your oven” any second.

It’s actually the second batch of meatballs that’s still in the oven.  The first batch is sitting on the stovetop cooling, and before I take it to the college tomorrow, I’ll have to add some of the second batch to the pan, because we’ve “sampled” so many of the meatballs, well, let me just say the pan is nearly empty there are a few meatballs gone missing. It’s a mystery.

Usually, I make the actual meatballs myself, but I might have cheated and bought a bag of frozen ones earlier.  Maybe.

They’ll never know, will they.  The only other thing I’ll need tomorrow is my gradebook and a box of toothpicks.  That’s the best way to eat sweet and sour meatballs, you know.

I love Texas Pepper Jelly more every day.  Honesty, I really do.
