What’s Cookin’ Wednesday: Pepper Jelly Glazed Ham

Sometimes, it’s the simplest things that turn out to be the best of all! We all glaze and bake a ham at least once a year, and why not glaze it with Texas Pepper Jelly? What a fantastic difference!
You don’t even have anything to mix together; you can use the pepper jelly right out of the jar.
The only difficult thing about Pepper Jelly Glazed Ham is deciding which flavor of pepper jelly to use! So far, my family’s favorites are Pineapple Habanero and Mandarin Orange Habanero.

Feast of Fridays: Pork Tenderloin Medallions in Pineapple Habanero Pepper Jelly

We’ve got houseguests for the next few days, and I always like to serve my guests an exceptionally nice meal at least once during their visit.
This batch of houseguests is no exception! Tomorrow night, we’re all having Pork Tenderloin Medallions in Pineapple Habanera Jelly. Yummmmmy!
This dish is extremely simple to throw together. Just cut a pork tenderloin into medallions and put into large crockpot along with the Pineapple. Sprinkle onion bits on top of this mixture, cover, and leave it alone for approximately 6 hours.
Mine is cooking overnight.
The pepper jelly flavor just soaks into the tenderloin, and it’s so good, you just can’t BELIEVE IT!
My family likes this with baked beans, corn, and au gratin potatoes.

Heat Up Valentine’s Day with Texas Pepper Jelly
Written by Jane Goodwin on February 9, 2009 – 12:05 am -Valentine’s Day is Saturday. That’s THIS COMING SATURDAY, in case any of you have lost track of time and still don’t have a gift for your beloved.
Why give an ordinary gift, though, when you can give something different, something EXTRAordinary, something that’s genuinely HOT?!
Might I suggest: Fix a romantic candlelight dinner for two, with soft music and flowers in a vase, and a small gift-wrapped sparkly something by his/her plate? For the main course, how about chicken breasts a la Pineapple Habanero pepper jelly? Marinate the chicken in the pepper jelly, and however you choose to prepare it, brush more pepper jelly over it several times as it cooks. If you use your crockpost, just let the chicken marinate AS it cooks, smothered in pepper jelly.
The warm feeling that you both will feel as you enjoy your meal together will be even warmer than you planned. Pineapple Habanero pepper jelly is some pretty hot stuff, and hot stuff can lead to hot stuff.
I order Pineapple Habanero pepper jelly all the time. The big Texas Pepper Jelly boss himself can attest to that fact. Sure, my entire family loves it; in fact, my daughter pretty much cleaned us out of pepper jelly last night when she was here. Something about preparing a “hot meal” for “someone.” I didn’t ask for details. There are some things Mommy just doesn’t need to know.
Besides, Mommy is planning a “hot meal” herself, using Pineapple Habanero pepper jelly, and she and Daddy are looking forward to it. A lot.

What’s Cookin’ Wednesday: Pineapple Habanero Potato Salad

Now, this recipe will seem odd to many of you, and frankly, I wasn’t sure how it would turn out, myself.
And exactly how did it turn out, you may ask?
It was awesome. There’s not a single bite of it left over!
With our dinner tonight, we had Pineapple Habanero Potato Salad!
Here’s what you need:
Ten large potatoes: peeled, cubed, and boiled. Drain and set aside.
Eight large dill pickles. Chop LARGE and set aside.
One large onion. Chop finely and set aside.
One green pepper. Chop LARGE and set aside.
Two boiled eggs. Peel and chop and set aside.
One small jar of red pimento. Open and drain.
3/4 cup of Miracle Whip.
One tablespoon cheap yellow mustard.
1/3 cup of Pineapple Habanero Pepper Jelly
Tiny dash of salt, if you must.
Now, dump the drained potatoes into a large bowl, and throw everything else in there with them. Mix thoroughly but carefully, so you don’t mash the potatoes. Cover the bowl tightly, and put it in the refrigerator. Potato salad is best cold, you know.
Our supper tonight consisted of: Leftover BBQ chicken, brussel sprouts, and pineapple habanero potato salad. It was a lovely, informal supper and my husband and son devoured every bite of everything on the table. Pineapple Habanero potato salad has been requested for this weekend.

What’s Cookin’ Wednesday

My kids were jonesing for a “different” kind of snack last night, and I immediately thought of my Texas Pepper Jelly. My daughter Sara then thought of the big “loaf” of Velveeta cheese that she’d seen in the refridgerator earlier. (We’re seldom without Velveeta in this house.) (Now that we’ve discovered Texas Pepper Jelly, we’re seldom without that now, either!)
Sara hacked off a few slices of cheese and melted them in a cereal bowl. She then added the rest of MY jar of Pineapple Habanero Pepper Jelly, stirred it up (It did smell really, really good) and proceeded to crack open the package of snowflake-shaped Ritz crackers I’d been saving for my Thanksgiving pepper jelly appetizers.
Sigh. It’s just not possible to hide food from my kids. If it’s being saved for a special occasion, especially, they’ll find it and they will EAT it, too.
I don’t really mind. Besides, if you had smelled that Pineapple Habanero and Velveeta cheese dip, you’d have been here beating on the door. It was really far too good to waste on company. I told my children they could have it all. And they did.
