Spicy Chicken & Beans

Peach Mango Habanero Bird Bath This recipe uses Texas Pepper Jelly’s fantabulous Peach Mango Habanero Bird Bath sauce, and oh, boy, does it ever make a difference in a recipe! You and your family will LOVE IT!

Ingredients:

1 large chopped onion
1 tablespoon canola or olive oil
2 minced garlic cloves
1 1/2 pounds boneless skinless chicken breasts, cooked & cubed
2 cans great northern beans, rinsed and drained
3 cans white or shoepeg corn, drained
1/2 cup diced tomatoes (canned or fresh)
2 cups water
1 cup Texas Pepper Jelly’s Peach Mango Habanero Bird Bath
1/4 cup chopped green chilies
2 tablespoons lemon or lime juice (I use lemon)
1 teaspoon lemon-pepper seasoning
1 teaspoon ground cumin
1/4 teaspoon black pepper

What to do:

In a small skillet, saute the onion in the oil until tender but not quite carmelized. Add the garlic and cook about a minute longer.

Transfer to your crockpot. Stir in the rest of the ingredients, cover, and cook on low for 8 hours. In other words, turn on the slow cooker, go to work, and when you get home, your house will smell WONDERFUL and your supper will be ready!

A Feast of Fridays: Spicy Texas Beans and Rice

feastoffridaysThis is one of my husband’s favorite rainy-day meals.  Be sure to buy brown rice; you can make this with white rice, but it’s so much better with the brown rice.  That’s what HE says, anyway!

Ingredients:

1/2 cup chopped onion

1/3 cup chopped green pepper

2 teaspoons garlic powder

1/2 cup Texas Habanero Salsa

3 cups cooked (or canned) kidney beans, well-drained   crockpotpepperjelly

One 14.5-ounce can diced tomatoes, and keep all the juice

One and 1/2 cups water

Salt and pepper to taste – I don’t use the salt but other people do.

3 cups cooked brown rice

What to do:

Throw everything but the brown rice into your crockpot, cover, and turn the dial to “low.”

6-8 hours later, turn off the crockpot and set the table.  Just before you serve, add the brown rice.

This, and some good bread and butter, make a perfect wet-weather supper.

A Feast of Fridays: Big Bean Blast

feastoffridaysEverybody in your family will love Big Bean Blast – even the little kids! The cook in your home will love it, too, and not just because it’s simple, inexpensive, and very nutritious.

It’s also one of Texas Pepper Jelly’s extremely easy Crock Pot Meals!

Ingredients:                                                    crockpotpepperjelly

1 cup chopped onion

1 minced garlic clove

3 cups cooked (or canned) large lima or butter beans – or both – drained and rinsed

1 28-ounce can diced tomatoes, plus all of the juice

1 bottle of Texas Pepper Jelly’s Sweet Ginger Garlic Habanero Hot Sauce

salt and pepper to personal taste

What to do:

Dump it all into your crockpot and set the dial to “low.” Go to work, or to the mall, or just take a nap. The point is, you don’t have to hang around the kitchen; let the crockpot do all of the work and worry about dinner.

When everybody comes home from work or school, dip up a bowl of Big Bean Blast for each and stand back.

Eating this is a blast. You’ll really understand the name of this dish later that night, though.

Totally worth it. TOTALLY WORTH IT!

Fix a big pan of cornbread to go with the Big Bean Blast, and you’ve got a MEAL.

Monday Munchies: Texas Black Bean Crockpot Chili

crockpotpepperjellyThe days might still be warm, but cooler weather is definitely creeping up on us!  When the weather turns cold, there’s nothing like a hot crock-pot meal to warm your family from the inside-out.  This winter, you’ll find many awesome crock-pot dishes right here on the Texas Pepper Jelly blog!  Our products are ideal for crockpot cooking!

For working people, especially, crockpot meals are convenient, simple, and a way to serve your family wonderful hot meals without having to hurry home after work to get supper started.  With a crockpot meal, you’ll throw it all together before you leave in the morning, or even the night before, and when you walk in the door after work, you’ll be greeted by yummy smells of a dinner all ready to serve!

Ingredients:

1 cup chopped onion

1/2 cup chopped red bell pepper

1/2 cup chopped green bell pepper

1 minced garlic clove

4 cups tomato juice (or crushed tomatoes with juice)

3 cups cooked black beans (canned beans work just fine)

3/4 cup water

1/2 pound cooked ground beef, sausage, or a mixture – if desired.  This chili is good vegetarian-style, too!

1/4 cup Texas Chipotle Habanero Hot Sauce

What to do:

Throw all of the ingredients into your crockpot, give them a quick stir, set the crockpot to “low,” and get on with your business.

When everybody gets back home in 8 hours or so, dinner will be ready.

My family likes a toasted cheese sandwich with their chili.

It’s even better the next day, but don’t count on having any then.  Texas Black Bean Crockpot Chili is usually devoured, right down to the last drop.

(Sometimes, I put some in a Tupperware container before I serve dinner, and hide it in the ‘fridge to take to work the next day.  No, I don’t feel the least bit guilty about doing that, but thanks for asking.)
