A Feast of Fridays: Pineapple Habanero Chicken Glaze

My family asks for this glaze frequently, so we have it once a month or so. In winter, or when the weather’s bad for any reason, I put the chicken pieces and the glaze in my crockpot, turn it on “low,” and go about my business for 6-8 hours. In summer, we use this same glaze on our grill.

Tomorrow however, I’m using my crockpot. A slow cooker is, truly, a cook’s best friend!

Pineapple Chicken Glaze:

1/2 cup butter or margarine

1 teaspoon cornstarch

1/4 cup lemon juice

1/3 cup Pineapple Habanero pepper jelly

2 tablespoons finely chopped onion

3/4 cup shredded pineapple

1 teaspoon soy sauce

1/3 teaspoon dried thyme

For your crockpot, just blend all the ingredients together in a bowl and pour it into the crockpot with the chicken.

If you’re grilling, or using your oven’s broiler, you need, for best results, to do a little more preparation with the glaze.

Melt butter in saucepan. Add cornstarch and blend. Add remaining ingredients; cook five minutes over low heat, stirring constantly. Brush on chicken during last five minutes of broiling or grilling time. Heat remaining glaze and serve with the chicken.

Stand back.

P.S. This glaze is delicious with pork, too!

A Feast of Fridays: Spicy Texas Beans and Rice

feastoffridaysThis is one of my husband’s favorite rainy-day meals.  Be sure to buy brown rice; you can make this with white rice, but it’s so much better with the brown rice.  That’s what HE says, anyway!

Ingredients:

1/2 cup chopped onion

1/3 cup chopped green pepper

2 teaspoons garlic powder

1/2 cup Texas Habanero Salsa

3 cups cooked (or canned) kidney beans, well-drained   crockpotpepperjelly

One 14.5-ounce can diced tomatoes, and keep all the juice

One and 1/2 cups water

Salt and pepper to taste – I don’t use the salt but other people do.

3 cups cooked brown rice

What to do:

Throw everything but the brown rice into your crockpot, cover, and turn the dial to “low.”

6-8 hours later, turn off the crockpot and set the table.  Just before you serve, add the brown rice.

This, and some good bread and butter, make a perfect wet-weather supper.

A Feast of Fridays: Big Bean Blast

feastoffridaysEverybody in your family will love Big Bean Blast – even the little kids! The cook in your home will love it, too, and not just because it’s simple, inexpensive, and very nutritious.

It’s also one of Texas Pepper Jelly’s extremely easy Crock Pot Meals!

Ingredients:                                                    crockpotpepperjelly

1 cup chopped onion

1 minced garlic clove

3 cups cooked (or canned) large lima or butter beans – or both – drained and rinsed

1 28-ounce can diced tomatoes, plus all of the juice

1 bottle of Texas Pepper Jelly’s Sweet Ginger Garlic Habanero Hot Sauce

salt and pepper to personal taste

What to do:

Dump it all into your crockpot and set the dial to “low.” Go to work, or to the mall, or just take a nap. The point is, you don’t have to hang around the kitchen; let the crockpot do all of the work and worry about dinner.

When everybody comes home from work or school, dip up a bowl of Big Bean Blast for each and stand back.

Eating this is a blast. You’ll really understand the name of this dish later that night, though.

Totally worth it. TOTALLY WORTH IT!

Fix a big pan of cornbread to go with the Big Bean Blast, and you’ve got a MEAL.

A Feast of Fridays: Texas Millet Chili

It’s been raining cats and dogs here for the past three days, and the weekend forecast doesn’t look much  better.  Is there anything better, on a cold, wet autumn night, than a bowl of Texas Millet Chili?

Ingredients:

1/2 cup Sweet Ginger Garlic Habanero Hot Sauce

1/2 cup Texas Habanero Salsa

2 chopped onions

2 stalks celery, diced

1 large carrot, diced

1 green pepper, diced

2 minced garlic cloves

1 medium can diced tomatoes with juice

2 cups vegetable stock (or tomato juice – your call)

1 cup millet

2 cups pinto or chili beans

1 cup corn kernels, drained

1/2 pound cooked sausage, hamburger, or a combination of the two – if desired

What to do:

Throw everything into a large pot; bring to a boil.  Turn heat down, cover, and simmer slowly for four hours.

crockpotpepperjellyYou can also make Texas Millet Chili in your crockpot!  Set it on “low” and don’t give it another thought for 6 hours.

Mmmm, either way you cook it, it’s awesome.

A Feast of Fridays: Twisted Cucumber and Onion Salad

feastoffridaysIndian Summer brings us some of the most beautiful weather of the year.  It can also bring us some of the hottest weather, beating out Summer.

This time of year also means tomatoes, cucumbers, and peppers.  Sometimes, far too many; how can we possibly use them all?

Twisted cucumber and onion salad is a good way!  There’s just nothing like a cold salad for lunch at the end of summer.

Ingredients:

One sliced cucumber (score it with a fork before slicing to make it all purty)

1 large purple or yellow onion, sliced

1 green pepper, sliced

1/2 cup Texas Pineapple Habanero Pepper Jelly

1/3 cup sour cream

1/4 cup French or Thousand Island salad dressing

What to do:

Mix everything – except the cucumbers – together in a medium bowl, cover, and let it ‘set’ for about 2 hours; it will get really juicy.  Add the cucumber just before serving.

Without the cucumbers, this salad will keep in the refrigerator for several days.  Once you add the cucumbers, though, it must be served right away.

This cold salad is really refreshing, as well as nutritious and a bit “different.”  It’s perfect for lunch on a hot day.

A Feast of Fridays: Easy Texas Vegetable Dip

feastoffridaysLooking for an easy, inexpensive, healthy snack for when the kids get off the bus, or when unexpected (or expected!) company drop in?  Easy Texas Vegetable Dip fills the bill!

Just get all the fresh vegetables out of your refrigerator, cut ‘em up, and lay them out on a big plate.

Then, put a bowl of our Easy Texas Vegetable Dip out with them, and stand back!

Ingredients:

2 cups mayonnaise or Miracle Whip

2 tbsp. Texas Habanero Salsa (or Texas Raspberry Chipotle)

2 tbsp. grated onion

2 tbsp. Tarragon vinegar (any vinegar will work, but my family likes tarragon best)

1/8 tsp. curry powder

1/5 tsp. thyme

2 tsp. chopped chives

1/2 cup Texas Pepper Jelly (use any kind; you’ll have a fresh, new recipe every time!)

Combine everything in a medium-size bowl.  Chill, and serve with your raw vegetables, nacho chips, pretzels, or whatever anyone wants to dip into it!   It’ll hold the kids until suppertime!

A Feast of Fridays: Texas-Style Spicy Breakfast Pie

feastoffridaysI’m a big fan of those biscuit mix recipes.  When you jazz ‘em up with your own touches, they always seem like homemade masterpieces to me.

I’m also very lazy, especially in the morning.  That’s one reason I love to fix breakfast casseroles.  Another reason is that my family LOVES them.

This one is their favorite:

Texas-Style Spicy Breakfast Pie

Ingredients:

1 pound thoroughly cooked pork sausage OR 1 pound thoroughly cooked bacon

1 huge chopped onion (my husband loves onions)

3 eggs

1 cup skim milk (any kind of milk will do; we just happen to like skim milk.)

1 cup shredded Taco cheese

1/2 cup bixcuit mix, such as Bisquick

Texas Habanero Salsa

Sour cream

What to do:

Spoon sausage or bacon into greased casserole or pie pan.  Top with chopped onion and cheese.

In medium bowl, mix the milk and eggs, and gradually whisk in baking mix.  Pour mixture over the meat and cheese in the casserole or pie pan.

Bake in a 400 degree oven for about a half hour; after twenty minutes, check every few minutes with a butter knife.  When the knife comes out clean, the breakfast pie is done.

Let it stand about fifteen minutes before you try to cut it; the slices will be firmer.

Serve with salsa and sour cream.

Don’t look for any leftovers.

A Feast of Fridays: Texas Orange Juice

feastoffridaysHere’s another simple suggestion to kick that glass of orange juice up a few notches:  Add a spoon or two of Texas Mandarin Orange Habanero pepper jelly to it!

Stir thoroughly, add some ice cubes and a straw, and drink up!

My husband will occasionally add a shot of vodka to his Texas Orange Juice, but you didn’t hear that from me.  It’s really, really good, though.  :)

A Feast of Fridays: Spicy Spirals

feastoffridaysIf you are looking for a party appetizer or simply a healthy snack, there’s nothing like Texas Pepper Jelly’s Spicy Spirals!

Spicy Spirals can be made well ahead of time, too, saving you a LOT of hassle when you’ve got PEOPLE coming over, or just when you want something the kids can help themselves to during those hot summer days.  I keep them in the refrigerator all the time!

Ingredients:

1 cup shredded Cheddar cheese

4 ounces of softened cream cheese (I use Neufchatel because we’re dieting)

1/2 cup diced green chiles

1/2 cup sliced green onions

1/2 cup chopped ripe olives

4 soft 8-inch flour tortillas (You can also use biscuit dough or dinner roll dough)

1 jar Texas Habanero Salsa

What to do:

In a medium-size bowl, combine the cream cheese, Cheddar cheese, chiles, onions, and olives.

Spread about 1/2 cup of the cheese mixture on each tortilla.  Roll up, and wrap each roll in plastic wrap.  Put in the refrigerator and chill for at least an hour – overnight works best for me.

Remove the plastic wrap and slice each roll into about six 3/4-inch pieces.  Serve with Texas Habanero Salsa for dipping.

For variety, you can use red bell peppers or whole chiles, or almost anything from your garden that your family likes.  Sometimes I add sausage.

Unless your children are very young, you can even stick a toothpick in each spiral to save having to wash more silverware!

You’ll discover that you can never make too many Spicy Spirals; they’ll disappear like magic, and your family – or your guests – will always ask for more!

A Feast of Fridays: Cool, Spicy Green Salads

feastoffridaysIt’s been really hot and humid here lately.  At the end of these long hot summer days, the last thing we want for supper is something that requires the heating of the oven.

We’ve been having all kinds of green salads for supper, and they suit us just fine!

This time of year, our selections of fresh greens are fabulous; the Farmer’s Markets are going strong, and we can put together a lovely big salad for not much money at all.

And what do we “dress” our hot summer night salads with?

We use our favorite Texas Pepper Jellies instead of salad dressing!  Seriously, it’s DELICIOUS!

My husband put Peach Habanero on his salad, and my son swirled some Pineapple over his.  I keep the pepper jellies in the refrigerator, and the cold hotness was soooo good on those fresh greens!

Really, it’s all a person needs for supper in this weather.

Sometimes it ‘s the simplest things that are the best.
