Eat Snails on Halloween with Texas Pepper Jelly
Written by Jane Goodwin on October 31, 2008 – 12:05 am -
All he needs is a couple of antennae, or eyeballs if you want to take a short cut, and he’ll be complete! (Stick those on the snails AFTER baking.)
To make your Halloween Snails, just use any yeast bread or roll recipe OR do the quick fix and buy some bread dough in the dairy case. Roll it out and cover it with any kind of Texas Pepper Jelly you want. Vary the flavors with the different batches of snails rolls, even. My daughter likes to sprinkle cinnamon on the pepper jelly before she rolls it up.
Put some food coloring in the bread dough for an even great Halloween experience. After all, if regular whitish snail-rolls are good, green or red or yellow snail-rolls must be even better, right?
After you spread the rolled-out dough with pepper jelly and whatever else you like, roll it up and cut it into rounds of about half the size you want your snails to be. (Yeast dough increases in bulk, you know.)
Bake at 375 degrees for about twenty minutes. It’s always a good idea to check after ten minutes, and gauge your timing thusly.
Tell your kids and their friends that the snails are done, and they should “come and get it!” before they crawl away.
Have some more pepper jelly in bowls for dipping purposes. Snails should be slimy, you know.
When it’s not Halloween, just tuck the snails’ heads into the roll before you bake them, and you’ll have a normal-looking appetizer, or breakfast, or snack, or whatever. Pepper Jelly rolls are actually very good for you, and pepper jelly rolls are MUCH better for your kids than sugary rolls.
Eat. Enjoy. Pepper Jelly is awesome.

What’s Cookin’ Wednesday: Shrimp!
Written by Jane Goodwin on October 29, 2008 – 12:05 am -
When you cook with Texas Pepper Jelly, everything becomes so EASY!
This time of year, people begin to have more parties than ever, and when there is a party, there simply must be food!
One of the easiest appetizer of all is shrimp-n-dip; this is not only simple as can be: it looks fantastic on your table and your guests will absolutely LOVE IT!
Just steam or boil some shrimp (BE SURE YOU DE-VEIN THEM FIRST! You know what that brown streak IS, right? Pull that thing OUT!) and arrange the cooked shrimp on a plate with a container for the dip in the middle. If your shrimps are large enough, hang them around the sides of the dipping bowl. If the food is going to be sitting out on the table for a long time, arrange the shrimp on crushed ice.
The dip? That’s the easiest part of all! Open a jar of Texas Pepper Jelly (any flavor; they ALL work for this!) and pour it into the dipping bowl. People will pick up a shrimp, dip it into the Texas Pepper Jelly, and then proceed to tell everybody in the room to do likewise because they’ve never tasted anything so good in all their lives.

Texas Pepper Jelly in a Dominican Republic Recipe!
Written by Jane Goodwin on October 24, 2008 – 12:05 am -
This being United Nations Day (October 24) I thought it would be good to post another recipe, this time from a United Nations country.
Many Americans shy away from ethnic recipes, and I’m not sure why! With the addition or subtraction of a spice here, or an herb there, most cultures’ foods are pretty much the same.
Today, you’re going to learn how to make breakfast, Dominican Republic style! It’s easy as can be, and so yummy good, your family will want you to make this again and again!
You will need the following ingredients, and your finished product will feed four people with moderate appetites:
6 large eggs
¾ (or so) cups of diced ham (or bacon, or ¾ cup of cooked sausage, or sausage links, or pulled pork, or shredded beef)
1 diced tomato (or one small can of diced tomatos)
1 diced green pepper
1 diced onion
1 tsp. vinegar, any kind
2 tsp. vegetable oil
2 tbs. milk (any kind)
½ cup pepper jelly, any kind (experiment and find your favorite for this dish; they’re ALL good!)
Salt to taste, if you feel you must have salt
Heat the oil in a large frying pan. Add everything except the eggs, milk, and the pepper jelly.
Sautee until the green peppers and onions are tender.
Drain thoroughly.
Add pepper jelly and mix thoroughly.
Set aside to “set.”
In the same frying pan (no need to rinse it out) put all six eggs, add a little milk, and scramble.
Put pepper jelly mixture, and the scrambled eggs, in separate bowls, and set them on your breakfast table.
Each plate should contain a serving of scrambled eggs, covered with the pepper jelly mixture.
Add some toast (the pepper jelly is good on toast, too!) and you’ve got a breakfast fit for a king.
Thank you, Dominican Republic, for sharing this fabulous breakfast recipe with us!
Many thanks to all who signed up for the free newsletter and pepper jelly sample. This giveaway is now closed. Keep an eye on our blog, though; we give stuff away ALL THE TIME!

What’s Cookin’ Wednesday: Texas Pepper Jelly Appetizer/Snack!
Written by Jane Goodwin on October 22, 2008 – 12:05 am -
The Texas Pepper Jelly website has some recipes that make me weak in the knees just to think about! In fact, there are many fantastic ways to use Texas Pepper Jelly in your kitchen, and every Wednesday, right here, you can find a new recipe! What’s Cookin’ Wednesday is a regular feature here on our blog.
I’m going to start with one of my personal favorites, and it’s so easy, it’s almost unbelievable that it could possibly taste SO WONDERFUL since so little effort goes into it. You don’t even have to cook it! I’ve made this with regular jams and jellies countless numbers of times and it’s always good, but with Texas Pepper Jelly, it’s more than merely “good.” It’s AWESOME!
Just unwrap a package of cream cheese and let it soften. Then, a few minutes before it’s time to dig in, pour a jar of Texas Pepper Jelly – any flavor will work – over the cream cheese, set out some crackers (all kinds!) and stand back. The whole thing will be gone before you can count to ten, and your crowd will ask for more!
