Spicy Peach Ice Cream – In A Baggie!

Grilling season is OFFICIALLY here now, and even if you’ve still got a little snow on the ground, it’s time to uncover the grill and start using it.

Grilling out is best when you’ve got a crowd, and family reunions are the best kind of crowd because they’re so often a mixture of generations – older people, children, and everything in between.

After all that excellent food is eaten, it’s time for dessert, and what dessert can rival Spicy Peach Ice Cream in a Baggie for delicious fun! Nobody is ever too old to play with their food!

Bear in mind that this recipe is for ONE BAGGIE of ice cream. Therefore, each individual will have to follow these directions with his/her own individual baggie of ice cream!

Ingredients:

1/2 cup milk (any kind of milk will be fine, so depending on your dietary needs and what you’ve got on hand, feel free to use skim, 2%, whole, half-and-half, cream, almond, etc.)
1/2 teaspoon of vanilla
2 tablespoons of sugar (real or Splenda)
2 tablespoons finely diced peaches (canned, fresh, or frozen)
1 tablespoon of Texas Pepper Jelly’s Spicy Peach Grilling Sauce

4 cups of crushed ice
4 tablespoons salt
2 quart-size Zip-loc bag
1 gallon size Zip-loc freezer bag

What to do:

Mix the milk, vanilla, sugar, peaches, and grilling sauce in the quart size bag. Before sealing, try to force out as much air as possible, and then seal the bag. Double-check the seal – you don’t want ANY leakage. Put the filled bag inside the second bag and double-check that seal, too. (The two bags are JUST IN CASE you get a leak. . . .)

Place the two quart bag inside the gallon bag. Fill the gallon bag with ice and sprinkle all of the salt on the ice. Let as much air as possible escape, and seal the bag. Double check the seal!

Play with the bags. Toss them back and forth. Knead them. Play catch with them. Check the seals occasionally; if you get an inside leak, your ice cream is ruined.

After about 7 minutes, check the contents of your inner bag. You’ve probably got ice cream! If you don’t, play with the bags a few more minutes.

Once your mixture has turned to ice cream, remove the inner bag, rinse off the salt, open the bag, and dig in with a spoon!

P.P.S. You can use any of Texas Pepper Jelly’s pepper jellies or Rib Candies in your ice cream, with or without the fruit. If you do use fruit, try to match it with the flavor of pepper jelly or rib candy.

Zesty Texas-Style Crockpot Sloppy Joes

Who doesn’t love sloppy joes? I tend to sing the Adam Sandler song about sloppy joes as I put this recipe together, but I’ve always been classy like that. This sloppy joe recipe will become your family’s favorite sloppy joe recipe after one meal – it happened that way at my house!

Ingredients:

1 pound ground beef, crumbled, cooked, and WELL DRAINED
1 teaspoon garlic powder
one large onion, finely chopped
one green bell pepper, finely chopped
1 raw carrot, finely chopped
1/4 cup Texas Pepper Jelly’s Candied Jalapenos, chopped fine
1 can black beans, drained and mashed
1/4 cup tomato paste
1/2 cup tomato sauce
1/2 cup ketchup
1 teaspoon red wine vinegar
dash cumin
dash black pepper
dash chili powder

What to do:

Put everything in your crockpot and stir well. Set dial to “low” and forget about it for 6 hours or so.

Set out the bun, chips, and tossed salad, and you’ve got a nutritious, delicious meal. All those vegetables in the mixture make these sloppy joes into a dinner, not merely a lunch. This isn’t junk food, parents – it’s GOOD for your kids!

Sometimes I use mashed refried beans instead of black beans; my kids like it that way, too, but they prefer the black beans.

I also break the crockpot rules and will occasionally remove the lid and give the mixture a stir. If it seems dry, add a little – VERY little – water.

Texas-style Zesty Sloppy Joes are a perfect football-fan food, too!

Pineapple Sweet Fire Pickles: A Strom’s Best Friend!

Texas Pepper Jelly, Pineapple Sweet Fire Pickles My husband’s favorite sandwich is a Strom, loaded with half a salad bar, plus tomato sauce. He used to like a local restaurant’s Strom best, but those days are over.

Now, he likes the Stroms I make for him at home. There are several reasons for this.

Firstly, I use fresh ingredients. The sausage, cheeses, vegetables, etc, are all market fresh.

Secondly, I use Texas Pepper Jelly’s Rib Candy instead of tomato or spaghetti sauce.

Now, a person can’t eat a Strom without bread-and-butter pickles, and my husbandTexas Pineapple Sweet Fire pickles and sandwich used to like the regular ones that he got at the restaurants.

He doesn’t like those much any more, because he’s used to eating Texas Pepper Jelly’s Pineapple Sweet Fire bread-and-butter pickles with his stroms. I know why, too.

Pineapple Sweet Fire Pickles are just simply the most delicious pickles any of us have ever experienced, and we’re BIG pickle-lovers here.

Try them yourself. Texas Pepper Jelly’s Pineapple Sweet Fire pickles are the most awesome bread-and-butter pickles you’ll ever experience. No exaggeration, either.

I eat them straight out of the jar, but my husband prefers them with a sandwich, and preferably the sandwich will be a Strom. Stroms are, technically, an Italian sandwich, but they’re still way better with Rib Candy and Pineapple Sweet Fire than the usual way.

Loco Cheese Biscuits

pepper jelly, feast, fridays, spicy goodness Red Lobster has their famous Cheddar Bay Biscuits, and people love them. It’s no wonder, either, because they’re delicious! Texas Pepper Jelly has Loco Cheese Biscuits, and you’re going to love them even more! Our cheese biscuits have a “kick” to them that you’ll not find anywhere else.

This recipe has only a few ingredients, and uses Bisquick, which means it’s a shortcut. You can, of course, make your biscuits from scratch before adapting them with the Loco Cheese Dip, but when you can make them so easily, it’s not really worth the extra effort to make them in any other way!

Ingredients:

2 cups Bisquick baking mix
2/3 cup milk
1/2 cup Loco Cheese Dip
1/4 cup melted butter
1/4 teaspoon garlic powder

What to do:

Mix the Bisquick, milk, and Loco Cheese Dip until soft dough forms. Beat vigorously for about a minute. Drop the dough by spoonfulls onto a buttered cookie sheet.

Bake at 350 for 8 to 10 minutes, or until golden brown. Mix the butter and garlic powder, and brush over the warm biscuits before removing them from the cookie sheet. Serve warm.

Spicy Texas Veggie Dip

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food Looking for a quick, easy, tasty, and inexpensive vegetable dip for a hot summer night, a quick snack, or a party? Look no further! Texas Pepper Jelly’s Spicy Texas Veggie Dip is what you’re seeking, and you’re in the right place!

Ingredients:

1 cup sour cream (don’t use fat-free)
1/2 cup finely grated Cheddar cheese
1/2 cup Loco Cheese Dip
1/2 cup mayonnaise or Miracle Whip (I’ve used both and the difference is subtle)
3 tablespoons minced green pepper
2 tablespoons minced red pepper
1 tablespoon Texas Rib Candy, any flavor

What to do:

Mix, chill, and serve with pretty much any kind of raw vegetables your family or guests like. My son spreads this mixture on bread and eats it like candy. It’s also good with crackers and breadsticks.

Apricot Habanero and Meatballs? Mmmm, Delicious!

texas pepper jelly, new product I have always made my (locally – very locally!) famous sweet & spicy meatballs by combining apricot jam, barbecue sauce, and pretty much most of the spices from my pantry’s “baking shelf.”

Now I make my soon-to-be-famous – locally and beyond! – sweet & spicy meatballs another way. The best way.

I use Texas Pepper Jelly’s new Apricot Habanero pepper jelly instead of plain, boring apricot jam. It makes such a difference – my family is crazy about it!

Ingredients:

1 2oz jar of Texas Pepper Jelly’s Apricot Habanero
1 bottle of your favorite barbecue sauce
1 teaspoon powdered cloves
1 teaspoon cinnamon powder
1 teaspoon nutmeg powder
1 teaspoon onion powder
Dash of salt
Dash of pepper
3 dozen meatballs (cooked)

What to do:

Put all of the above ingredients (except the meatballs) in a big mixing bowl and blend well. Don’t use an electric mixer, but a whisk works great.

Put the meatballs in a large baking pan and cover with the sauce. Bake at 350 for a half hour.

I put a box of toothpicks on the table and a big spoon in the meatballs and stand back.

These are even better the next day. I don’t know about the third day; we never have any left then.

This is a great party dish, or a fabulous dinner dish to eat alone or over rice.

Oh, this recipe works well in your crockpot, too. In fact, the flavors blend even better when you do it that way.

Some people make their spicy meatball sauce with grape jam, but we’ve always preferred apricot, and Texas Pepper Jelly’s new Apricot Habanero is absolutely perfect for this recipe! It’s also great all by itself; we love to spread it on hot biscuits, and the kids like to dip breadsticks in it.

Texas Tortellini Soup

This recipe for Texas Tortellini Soup uses enough pre-made ingredients to be super easy, and enough additional ingredients that you can tell your family it’s “homemade!”

Ingredients:

1 9-oz package of refrigerated cheese tortellini
2 cans of condensed tomato soup, undiluted
1 1/2 cup vegetable broth
1 cup Texas Pepper Jelly’s Candied Jalapenos
2 cups milk (I use skim)
2 ups half-and-half cream (you can’t substitute this one!)
1/2 cup chopped tomatoes (canned or fresh)
1 tsp onion powder
1 tsp garlic powder
1 tsp basil
1/2 tsp salt
1/2 cup shredded Parmesan cheese (not the powdered kind!)
Additional cheese to taste

What to do:

Cook the tortellini according to package directions, drain, and set aside.

In a Dutch oven, combine everything else except the cheese, and heat to simmer, stirring constantly. Don’t let it stick! Add the tortellini and cheese. Sprinkle the additional cheese on each bowl if desired. This recipe will feed a crowd, and it’s just as awesome the next day!

Spicy, Cheesy Chicken Lasagna!

Loco Cheesy dip Oh, you’re definitely going to be printing this recipe out and sticking it on your refrigerator door! Your family will LOVE IT!

Ingredients:

2 12-oz cans evaporated milk (not the fat-free kind)
1 1-oz package of dry Ranch Dressing mix
3 cups of skinned, cooked, cubed chicken
dash of pepper
2 cups Texas Pepper Jelly’s Loco Cheese Dip
1 cup grated mozzarella cheese
1 box of lasagna noodles

What to do:

Cook the noodles, drain, and set aside. Cook the chicken and rinse in cold water. Set aside to cool. When cool enough, cut into small cubes.

In a large saucepan, combine the milk and Ranch dressing. Heat over low heat, stirring constantly until the dry ingredients are dissolved. Stir in the chicken and pepper.

In a WELL-BUTTERED 9×13 pan, layer half of the noodles, sauce & chicken, and cheeses. Repeat layers.

Bake at 350 for approximately 30 minutes or until hot and bubbly. Let it rest for 15 minutes before slicing and serving.

Throw a tossed salad together with this and you’ve got dinner.

Stand back; your family will go nuts over this dish. Don’t count on any leftovers, either.
