Memorial Day Suggestions and Recipes!

Memorial Day, Texas style

Memorial Day weekend is upon us – the weekend of family reunions, get-togethers, picnics, cookouts, family, friends, all linked together with memories and fantastic food.

The traditional Memorial Day meal is a cookout, naturally. By this time, we’ve all used our grills and mad outdoor cooking skills several times – we hope. This weekend is really special, though. Memorial Day. Our reunions will be filled with beloved people who are there in body and people who are there in spirit and memory.

And, there will be food. Exceptionally delicious food, too. Here are some of Texas Pepper Jelly’s most beloved picnic recipes.

First of all, the meat. Grilled outdoors, covered with homemade BBQ sauce, Texas Pepper Jelly or Rib Candy, injected with Butcher’s best, and grilled to perfection, over charcoal or gas. Remember, lean meats grill best, as there isn’t as much fat to drip down and cause flareups, and thinner glazes aren’t as likely to burn.

What’s a picnic without Pineapple Sweet Fire Potato Salad, after all?

Don’t count on having any Texas Pepper Jelly cole slaw left over for tomorrow.

Got a few vegetarians at your cookout? Don’t worry – we’ve got some great recipes for a vegetarian cookout, too!

You can’t have a cookout without baked beans!

For dessert, Texas Pepper Jelly has several awesome recipes for all kinds of pies and cakes, but for an outdoor cookout, why not let your guests make their own ice cream in a baggie? It’s fun and delicious, and each guest can add the pepper jelly, fruit, or whatever that they individually prefer! (We like it best with pepper jelly and diced fruit.)

Add these fabulous, delicious Texas Pepper Jelly recipes to the outdoor buffet, let your guests place their contributions there, too, and see which pans empty out the fastest. We’re betting on ours, although anything Grandma brings will come in a close second.

Texas-Style Chicken Nuggets

spicy chicken, texas chicken nuggets Chicken nuggets are probably one of your children’s favorite foods, but our Texas-style Chicken Nuggets will be one of your entire family’s favorites!

Ingredients:

3/4 cup lemon juice (fresh, not that stuff that comes in the plastic lemon!)
1/3 cup water
1 1/2 tablespoon crushed dried rosemary
1 tablespoon garlic powder
2 teaspoons Texas Bird Bath
2 teaspoons Worcestershire sauce
4 boneless chicken breasts, cubed
2 clices toasted mixed grain bread
1/2 cup chopped almonds, toasted (optional) (but they’re really good)
3 egg whites, beaten

What to do:

In a medium bowl, combine the lemon juice, water, rosemary, garlic, Texas Bird Bath, and Worcestershire sauce. Add the chicken to this marinade, make sure each piece is covered, cover tightly, and chill in the refrigerator overnight.

Toast the bread, and grind it to coarse crumbs. Stir in the almonds.

Preheat your oven to 400 degrees.

Lift the chicken from the marinade, roll in the eggs whites, and then roll in the crumb mixture. Make sure the chicken is completely coated.

Place the chicken on a greased cookie sheet and bake for 10-12 minutes. Serve hot, although my kids love these nuggets cold, too.

Serve with various Texas Pepper Jellies for dipping.

If this is for a meal, this recipe serves 4. If you’re making this recipe as a snack, it will serve more.

Texas Crockpot Chicken Chili

slow cooker, hot summer nights, perfect summer cooker Here’s another slow cooker specialty from Texas Pepper Jelly to help you plan and prepare good, hot, nutritious meals even on these horrifically hot summer nights.

Our Texas Crockpot Chicken Chili is delicious and different, and we think your family will love it!

Ingredients:

3 whole skinless, boneless chicken breasts
1 onion, chopped
1 16-oz can of chili beans (drain)
1 15-oz can of black beans (drain)
1 15-oz can of corn, drained
1 cup of Texas Bird Bath
1 cup tomato sauce
2 cups of diced tomatoes
1/2 cup green chilis
1 can of beer
shredded Cheddar cheese
sour cream

What to do:

Put the onions, chili beans, black beans, corn, Texas Bird Bath, tomato sauce, beer, and diced tomatoes in the crockpot, and stir well. Place the chicken breasts on top of the mixture and press down slightly until barely covered by the mixture.

Put the lid on the slow cooker, set the dial on low, and don’t give it another thought for 5 or 6 hours.

After 5 or 6 hours, remove the chicken breasts, let them cool just enough to be handled, and shred the chicken.

Stir the shredded chicken back into the mixture and continue cooking for two more hours.

Serve hot, topped with the cheese and sour cream if desired. My kids prefer crushed crackers, but my husband loves the cheese and sour cream. He also wants more diced onion sprinkled on his.

And there you have it: an easy, nutritious, delicious hot meal that doesn’t compromise your home’s air conditioning even on the hottest summer days!

Spicy Chicken & Beans

Peach Mango Habanero Bird Bath This recipe uses Texas Pepper Jelly’s fantabulous Peach Mango Habanero Bird Bath sauce, and oh, boy, does it ever make a difference in a recipe! You and your family will LOVE IT!

Ingredients:

1 large chopped onion
1 tablespoon canola or olive oil
2 minced garlic cloves
1 1/2 pounds boneless skinless chicken breasts, cooked & cubed
2 cans great northern beans, rinsed and drained
3 cans white or shoepeg corn, drained
1/2 cup diced tomatoes (canned or fresh)
2 cups water
1 cup Texas Pepper Jelly’s Peach Mango Habanero Bird Bath
1/4 cup chopped green chilies
2 tablespoons lemon or lime juice (I use lemon)
1 teaspoon lemon-pepper seasoning
1 teaspoon ground cumin
1/4 teaspoon black pepper

What to do:

In a small skillet, saute the onion in the oil until tender but not quite carmelized. Add the garlic and cook about a minute longer.

Transfer to your crockpot. Stir in the rest of the ingredients, cover, and cook on low for 8 hours. In other words, turn on the slow cooker, go to work, and when you get home, your house will smell WONDERFUL and your supper will be ready!

Spicy Crockpot Chicken Soup

You know that wonderful feeling, when you’re at work, of remembering that your dinner has been cooking all day in your crockpot and will be ready to eat the very moment you walk through the door tonight. . . .

Why not make some Spicy Crockpot Chicken Soup tonight!

Ingredients:

1 16-oz can of chili beans, drained
1 16-oz can of black beans, drained
1 15-oz can of whole kernel corn, drained
1 8-oz can of tomato sauce
1 can of beer (yes, you read that right!)
1 large onion, chopped
2 10-oz cans of diced tomatoes
1 small can of diced green chilies – undrained
1 cup Texas Bird Bath
3 whole skinless chicken breasts
shredded cheese – whatever kind our family likes best
sour cream

What to do:

Put everything except the chicken, cheese, and sour cream in your crockpot, and stir to blend well. Lay the chicken breasts on top of the mixture. Set our crockpot on low, cover, and go to work.

When you get home six or so hours later, remove the chicken breasts, let them cool, and shred them. Add the shredded chicken back into the soup. You can then serve right away, or let it cook for two/three more hours to blend even more.

Serve with the shredded cheese and sour cream. Lay some crackers on the table, give everybody a big soup bowl and spoon, and stand back.

If you have leftovers, put them in the refrigerator. Your soup will be even better tomorrow.

This recipe makes AWESOME soup. Your family will love it.

Grilling in the Heat!

grill We’re in the midst of some dangerous heat advisories, and few people around these parts want to fire up the oven or even the stove-top right now. Hot as it might be outside, it’s NEVER too hot to grill outdoors, and this weather is the perfect excuse – as if any of us needed an excuse – to thaw out some chicken and ribs and invite some people over for dinner.

Whether your grill uses charcoal or gas, anything cooked on it will taste far better than the same thing cooked inside on a convention stove. Don’t get me wrong – meat is delicious cooked indoors, but let’s face it: meat cooked outdoors on your grill, with some Texas Pepper Jelly or Rib Candy or Bird Bath is going to be delicious beyond all comprehension or description.

So throw together some Spicy Potato Salad, some Pineapple Habanero Cole Slaw, ask your guests to bring some cake, and have a feast.

Grilling Chicken? You Need Texas Bird Bath!

grillNobody knows grilling like Craig Sharry, and a smart outdoor cook will take Craig’s advice before any other.

This excerpt from this month’s Texas Pepper Jelly Newsletter contains some of the best chicken-cookin’ advice I’ve ever seen. I’d follow it if I were you!

Chicken is one of the most popular foods to grill, especially because it’s so versatile and requires very little preparation. However, to successfully grill chicken without it becoming a char-grilled mess, there is a little bit of skill or know-how involved:

* Start with a clean grate; otherwise, you will have a lot of flare-ups. Then lightly coat the grate with cooking spray or oil to prevent chicken from sticking during the grilling process.

* Speaking of flare-ups – they are inevitable, so be prepared. Excess grease from fat and skin dripping onto the coals will cause flare-ups, so when that happens remove the chicken until the flames subside before putting the chicken back down. If the flare-ups continue, move the chicken to a cooler part of the grill.

* Larger pieces of chicken take longer to cook than smaller pieces, so you can either start cooking the bigger pieces in advance, or set up your grill so that one part is hotter than the other. If doing the latter, cook the larger pieces near the higher temps, such as the breasts. Place the thighs a little further away, followed by the legs. Finally, the wings will be grilled over the coolest part of the grill. This will help everything to cook evenly and pretty much on time.

* Using tongs (not a fork), turn the chicken frequently – about every five minutes – to prevent charring and blistering, while insuring doneness.

* To further prevent charring, apply barbecue and other savory sauces such as the Texas Bird Bath during the last 20 minutes of grilling.

* Chicken is done when it reaches an internal temperature of 165 degrees. Different parts take different amounts of time to cook as follows:

* wings – approximately 10 minutes per side
* boneless breasts – approximately 5 to 6 minutes per side
* bone-in chicken – approximately 25-30 minutes, turning frequently
* chicken quarters – approximately 35-45 minutes, turning frequently
* chicken halves – approximately 45-60 minutes, turning frequently
* whole chicken – approximately 30-40 minutes on each side with indirect heat in a covered grill

Special note: marinating or brining chicken in advance helps to keep it from drying out during the grilling process.
