Texas Pepper Jelly at the Christmas Reunion
Written by Jane Goodwin on December 28, 2009 – 2:51 am -
This is the tray I took to our family reunion on Christmas Day. That’s Pineapple Habanero pepper jelly in the center, and the red stuff is Habanero Salsa. Check out which dips have been dipped into the most!
The plain old cheese dips couldn’t even begin to compete with Texas Pepper Jelly products! Which reminds me. . . I need to order some more. The delivery is so fast, I’ll probably get them in time for New Year’s Eve if I order today!
My family loves all of the Texas Pepper Jelly flavors, but I’ll have to say that Pineapple Habanero is everyone’s favorite here. And that Habanero Salsa is the only kind my son asks for, and he’s somewhat of a salsa expert!
By the way: do y’all see that shrimp to the right of the tray? People were dipping shrimp into the pepper jelly, too, and the verdict was DELICIOUS.
Now, if you’ll excuse me, I need to order some more Texas Pepper Jelly. Darn family members ate it all.

Christmas Week in Texas: Wednesday!
Written by Jane Goodwin on December 23, 2009 – 3:23 am -
It’s Wednesday of Christmas Week, and I’m falling back on one of my family’s favorite old standby meals: Crockpot Tenderloin. Crockpot meals are so easy and hassle-free, and Christmas Week is a time when the less hassle, the better!
Pork tenderloin was on sale this week for only a few cents more than a dollar a pound, so I was able to buy a really big tenderloin. I cut it into “coins” and put them in my slow cooker. Then I cut up two large onions and sprinkled both onto the pork in the crockpot.
Last of all, I poured a jar of Pineapple Habanero pepper jelly over everything.
Put these ingredients in your crockpot before you go to bed, and all through the night the wonderful aroma will waft throughout your house and give you all fabulous dreams. In the morning, just turn off the crockpot and put it in the refrigerator. The first one home from work/school takes the crockpot out of the ‘fridge, plugs it in, and turns it on “low” while preparing the side dishes.
For dinner tonight, at my house: Pork Tenderloin Medallions in Pepper Jelly, baked beans (made with any of our Texas Pepper Jelly finishing sauces) cole slaw, and au gratin potatoes. Come on over if you want a taste; whenever I use any Texas Pepper Jelly product in my recipes, there are never any leftovers.
Pork Tenderloin Medallions can be made with any kind of pepper jelly. I just happen to have a jar of pineapple habanero handy!

A Feast of Fridays: Spicy Thumbprint Cookies
Written by Jane Goodwin on December 18, 2009 – 12:05 am -
To everyone who ordered from Texas Pepper Jelly yesterday: Don’t worry! You’ll get your stuff on time!
This weekend, why not make a batch of spicy thumbprint cookies? They’re not like a regular cookies, you know; they’re spicy! This recipe’s cookies are also sugar-free! If you are diabetic, you can have some of these cookies.
Ingredients:
1/2 cup butter, softened (not melted)
1 egg
1/2 teaspoon vanilla
1 and 1/4 cups flour
1/2 cup chopped nuts
3 teaspoons Splenda
Texas Pepper Jelly of your choice. Mix it up!
What to do:
In a large bowl, mix everything together except the Splenda and the Pepper Jelly.
Wrap in waxed paper and chill in refrigerator for about an hour.
Remove, unpeel, roll into little balls, and place them on an ungreased cookie sheet.
Dip your thumb in flour, and press firmly in the middle of each cookie, leaving a thumb-shaped indentation.
Bake 13-15 minutes at 350.
Remove from oven and sprinkle with Splenda.
Once cookies are cool, fill the thumbprint-shaped indentation with pepper jelly.
Stand back. These cookies are REALLY GOOD.
Pour yourself a big glass of ice-cold milk, put a few of these cookies on a plate, and relax with a good book before you go to bed tonight.

Fortunately, it’s not the 17th yet, and there is still time to choose your Texas Pepper Jelly gift and have it sent to your friends and family members!
There are so many ways to use Texas Pepper Jelly, but may I remind y’all that one of the simplest of all recipes is also the tastiest and most useful to know when company comes or your family just wants a delicious snack.

Texas Christmas: Super Easy, Super Fast Pepper Jelly Cookies!
Written by Jane Goodwin on December 6, 2009 – 11:03 pm -
A house without cookies is unacceptable, especially during the holiday season!
If you’re in a hurry, here’s a tip for you: just open a package of pre-made cookies, add a dollop of pepper jelly in the middle, and put them in the microwave for ten seconds! I’ve done this with plain butter cookies, oatmeal cookies (our favorite), peanut butter cookies, and gingerbread. All of these have been awesome! The only kind of cookie my kids didn’t like, with pepper jelly on it, was chocolate chip. All the others, however, were huge hits!
Speaking of gingerbread and pepper jelly: this is a fabulous combination! Some people might even eat it for breakfast. Ahem.
The point is, fabulous cookies don’t have to be homemade. You can make inexpensive, store-bought cookies into a wonderful, homemade-like treat with just a dab of Texas Pepper Jelly. We’ve used almost all of the various flavors, too; so far, so GREAT!
