Texas Chicken Wraps

Monday Munchies, spicy recipes, Texas Pepper Jelly Texas Chicken Wraps are a quick, nutritious meal, and you can use up several leftovers in the making!

Ingredients:

6 flour tortillas (soft)
1/2 teaspoon garlic powder
dash of black pepper
12 oz. of skinless, boneless chicken breast strips (sliced VERY thin)
1 tablespoon olive oil
4 cups shredded broccoli or broccoli slaw mix
1 medium onion, cut into very thin wedges
Texas Pepper Jelly, any flavor
Texas Rib Candy, any flavor

What to do:

In a medium mixing bowl, combine the chicken, garlic powder, and pepper, tossing to coat evenly.

In a large skillet, heat the oil. Cook and stir seasoned chicken for 2-3 minutes or until no longer pink and raw-looking. Add the broccoli and onion to the skillet; cook and stir for 2-3 minutes. Remove from heat.

Now for the assembly – your family might want to help with this part! Spread each tortilla with a tablespoon of pepper jelly OR Rib Candy; alternate so there will be CHOICES!

Top with chicken strips and vegetable mixture. Roll up each tortilla, securing with a toothpick. If desired, heat in microwave for just a minute or two.

Serve immediately, with pepper jelly and rib candy. Everybody will need a spoon. :)

You can use almost any shredded vegetable with this recipe; I’ve used green beans, corn, peas, okra. . . really, whatever leftovers you’ve got in the refrigerator will work, and using different vegetables makes this recipe into a different experience each time! Using different pepper jelly flavors makes this meal an adventure, too.

You’ll need a good sharp knife for all this vegetable and chicken shredding. Why not get one of our fantastic Messermeister knives; they’re guaranteed to do a wonderful job!

Spicy Texas Pinwheel Meal

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food You might as well print out this recipe and add it to your “family favorites” file, because once your family dives into this delicious Spicy Texas Pinwheel Meal, they’re going to ask for it weekly until they all grow up and move out. This is also an excellent party food, or snack food for football parties.

Ingredients:

1 cup shredded chicken
8 ounces of shredded mozzarella cheese
4 ounces of shredded cheddar cheese
1/2 cup of Texas Pepper Jelly’s Apple Habanero Rib Candy
1/3 cup of ranch dressing
1/4 cup of shredded, peeled apple
1/4 cup of water chestnuts, sliced thin
1/3 cup of mushrooms, cut into small pieces
1/4 cup of pimentos, drained thoroughly
1 rectangle-shaped pizza dough, home-made or store-bought (also works with pie crust or biscuit dough)

What to do:

Preheat your oven to 425.

On a well-floured surface (I use my table top) roll the pizza dough into a long rectangular shape. Round won’t work.

Mix together the Ranch dressing and Rib Candy, and brush across the dough. Add all of the other ingredients, except the cheese, and spread these over entire surface of dough. Cover with both cheeses.

Begin rolling the dough; go slowly, or you’ll push the chicken mixture to one end. Roll this dough as if it were cinnamon bread! Once rolled, tuck in the ends so the middle doesn’t leak out in your oven.

Spray a rectangular baking sheet with Canola spray, and place the bread on the pan. Lift it with both hands!

Bake for 20 minutes; check to make sure it’s done. If it seems “raw,” return to oven and bake another 10 minutes.

Let it set up for 15 minutes, slice, and enjoy. It’s really pretty when it’s cut into individual slices! Don’t make the slices too thin or you’ll lose the contents. Don’t count on any leftovers, although if by some remote chance you have some, wrap them in foil and freeze. This Pinwheel Meal is even better with a little time on it. The problem is slapping everybody’s hands away from that last piece so YOU can eat it later!

Christmas in Texas: Like A Bowlful of Jelly

Santa, according to the poem, had a belly that shook like a bowlful of jelly when he laughed. Whenever I hear or read that, it’s not regular jelly that comes to my mind any more.

It’s Texas Pepper Jelly.

My family have gotten into the habit of using pepper jelly on something at almost every meal now. So, I’ve gotten into the habit of putting a bowlful of pepper jelly on the table for all three meals.

I’ve caught them all licking the spoon, too.

We put pepper jelly in coffee, sangria, tea, cocoa, and water. We freeze pepper jelly in ice cube trays and drop ‘em in lemonade and punch. We put pepper jelly on mashed potatoes, and toast, and biscuits. We use pepper jelly in baked beans, and salads of all kinds. We marinade chicken, and pork, and fish in pepper jelly. Pepper jelly has replaced butter on our table. My kids put pepper jelly on pancakes and waffles and French toast. My husband makes a peanut butter-and-pepper jelly sandwich when he gets home from school. We stir it into soup. We use it instead of salad dressing. We spread it on most sandwiches.

Texas peppr jelly Christmas logoReally, I can’t think of a single pepper jelly “experiment” that flopped. The stuff is just so good.

About that sangria with pepper jelly. . . . I highly recommend that one. I mean, it’s fruit, right?

Barbecue Season Approaches!

Texas Pepper Jelly Does anybody really believe that the best recipes are the complicated recipes? At Texas Pepper Jelly, sure, we have some complicated recipes, and they’re awesomely deliciousl

However, we also maintain that our simple recipes are some of the best. You don’t have to spend hours in the kitchen to come out with a tasty treat for your family or friends. All you have to do is pour a jar of Texas Pepper Jelly over cream cheese, or spread some pepper jelly on your bread or crackers or toast. Any meat marinated in pepper jelly will melt in your mouth, and if I started nomming about Texas Pepper Jelly products and your grill, we’d be here all night.

But I will remind you that whatever you cook on your outdoor grill will be 100% better if you slather it in pepper jelly or Rib Candy.

It’s soon-to-be-summer. Stock up!

Monday Munchies: Spicy Cornbread Skillet Pie

mondaymunchies I’ve made Texas Pepper Jelly’s Spicy Cornbread Skillet Pie in several ways now, and each one was equally yummy! The basic recipe stays the same – it’s the fruit and pepper jelly choices that jazz it up.

Basic recipe:

1 teaspoons olive oil
1 pound any kind of sausage your family likes – I’ve used kielbasa, links, bulk sausage, and all kinds of Italian and Polish sausage. Your call, here.
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large onion, chopped
3 garlic cloves, chopped
1 8.5 oz box of corn muffin mix
1/2 cup grated parmesian
1/2 cup milk – I use skim
1 large egg
1/2 cup Texas Pepper Jelly – any flavor
1/2 cup whatever kind of fruit your pepper jelly choice used
(My family likes Berry Medley best, with blackberries, for this dish.)

Set your oven to 400.
In a large skillet, heat the olive oil, add the sausage, brown on all sides.
Drain the meat well, but don’t pour out the oil from the skillet yet; you still need it. On a cutting board, cut the sausage into small pieces, an inch or less, and let the pieces drain some more on thick paper towels.

Add the peppers and onion to the skillet and cook, stirring constantly, for a few minutes; then stir in the garlic. Stir a few more minutes, and add the sausage pieces to the skillet. Turn the burner OFF. If you are using a cast iron skillet, leave contents in it and cover them with your fruit and pepper jelly choice. If your skillet is not oven-friendly, transfer contents to a large baking dish and THEN cover with the fruit and pepper jelly choices.

In a large bowl, mix together the corn muffin mix, Parmesian, milk, and egg. Spread this batter over the skillet/baking dish mixture, leaving a quarter-inch border.

Bake in your 400 degree oven until golden brown, which should be for about 15 minutes. If a toothpick comes out icky, let it bake another five minutes.

My family loves this dish for breakfast, claiming that sausage makes it breakfast food. However, I think it’s even better left over, and I like it for lunch as well.

I also like it hot OR cold, but my family prefers it hot. We usually spread more pepper jelly over the top of the corn bread, too. I put mushrooms in it once, but my family did not care for that so I’ve never done it again. I used some leftover corn once, too, and that went over really well.

Texas Pepper Jelly’s Spicy Pinwheels

Texas pinwheels

Our spicy pinwheels are lovely to look at and even better to devour! They’re also easy as, well, pie, to make.

Ingredients:

2 refrigerated rolled pie crusts
1/2 cup Texas Pepper Jelly – any flavor
2 tablespoons granulated sugar – I use Splenda
1/4 teaspoon ground cinnamon
1/2 cup finely chopped pecans

What to do:

Preheat your oven to 400, and coat a baking sheet with Pam or its equivalent. Use parchment paper if you wish.

On a clean work surface – I use the kitchen table – sprinkle half of the sugar and half of the cinnamon. Unroll one of the pie crusts and place it on the cinnamon-sugar mixture and press gently to help the mixture stick to the crust.

Now, spread half of the pepper jelly mixture evenly all over the crust and sprinkle of the pecans over the top.

Then, roll the crust into a “log” and pinch both ends tightly. Repeat this process with the other pie crust and remaining ingredients.

With a sharp serrated knife, slice the logs into “coins” and arranged them, flatsided, on the buttered baking dish.

Bake for 20-25 minutes or until golden brown. The first few times you create these spicy pinwheels, it’s a good idea to set your oven timer to 15 minutes and when it rings, to check and then stand by to keep checking. No two ovens are alike, and overdone, too brown pinwheels are, well, not all that good. Baked exactly right, however, and nothing has ever tasted so good to you in all your life.

I like to brush melted butter onto the fresh-out-of-the-oven pinwheels, but my son prefers them without the butter. He just smears more pepper jelly on his.

These aren’t yeast rolls and won’t “rise” much, remember. They’re more “pie” then “roll.” In fact, if you prefer a slab of pie to a little pinwheel, you can just put the crust in a piepan and dump all of the rest of the ingredients on top of it.

It’s all up to you. Whatever shape your family prefers, you’ll never have to worry about flavors and tastes. With Texas Pepper Jelly, they’re ALL good.

Texas Pepper Jelly Crockpot Meals ROCK!

crockpotpepperjellyI have been so busy this week – what do you mean, it’s only Tuesday? – that my crockpot has gotten quite a workout. Well, by “workout” what I really mean is, I filled it full on Sunday afternoon and it’s just been sitting on the kitchen counter by the sink making the country-style ribs and pepper jelly inside it more and more tender with each passing hour. There’s a Tupperware bowl of spicy potato salad in the refrigerator and another smaller crockpot of baked beans beside the big crockpot. We are just dipping out of crockpots and Tupperware, and eating better than we’ve any right to.

I almost always use my crockpot with pork; it gets so unbelievably tender in a slow cooker. By tomorrow’s supper, those ribs are going to be melting off the bones.

The potato salad gets better as all the flavors blend, too. Ditto the baked beans.

All three concoctions are made with Texas Pepper Jelly and Texas Rib Candy.

I’m glad I made a lot; we’ll be eating on this meal for most of the week. Nobody’s complained.

Superbowl Leftovers? No Problem.

mondaymunchies Did you make Texas Pepper Jelly’s Spicy Sloppy Joes for your Superbowl party last night? If you did, you’ll know how to use that same recipe for our awesomely delicious Spicy Lasagna!

If you have any left over, use that. If your family and friends ate it all last night, you’ll have to mix up some more. Click here for the meat mixture recipe.

Texas Pepper Jelly Superbowl Leftover Lasagna. It’s yummy good.

Ingredients:

leftover sloppy joe mixture from last night
box of lasagna noodles
package of shredded swiss cheese
Any leftover vegetables you might have on hand, shredded, cooked or raw
Can or jar of pasta/spaghetti sauce

What to do:

First of all, don’t cook the noodles. You heard me. With this recipe, you can use the lasagna in its stiff, uncooked form.

Line the bottom of the lasagna pan with uncooked pasta. Cover it with meat mixture, then a layer of sauce. Add a layer of swiss cheese. Repeat layers until you get to the top of the pan, making sure you cover the very top layer with sauce and cheese.

Bake at 350 for about 45 minutes. Remove from oven and stick with a knife to see if the pasta is soft. If it’s still stiff, return to oven and bake for another fifteen minutes. Remove from oven to cool.

When lasagna is cool, stick with the knife again to check the pasta. It should be soft now.

Eat up.
