Texas Style Armadillo Eggs!

There are many ways to make “Armadillo Eggs,” but we think (and my kids agree) that Texas Pepper Jelly’s recipe is by far the blue ribbon WINNER!

Texas Style Armadillo Eggs are a perfect snack or party food. They’re easy to make, your whole house will smell wonderful, they’re nutritious, and your family will LOVE THEM!

Ingredients:

4 ounces of room-temperature cream cheese (I use Neufchatel)
1/4 cup Loco Cheese Dip (It’s on sale, too!)
1 tablespoon garlic powder
1 teaspoon finely-chopped cilantro
1/4 teaspoon ground cumin
Salt to taste (I don’t use any salt because the spices are enough)
6 medium-size jalapenos
2 pounds bulk sausage
1 tablespoon Butcher BBQ marinade
Shake & Bake (if desired) (I use it on half the batch, as my husband loves it)

What to do:

Preheat your oven to 375. Lightly grease a baking or cookie sheet

In a large bowl, mix together the cream cheese, Loco Cheese Dip, garlic, cumin, and cilantro. Blend well. Add a little salt if you think you need it.

Remove the stems from the jalapenos, cut in half lengthwise, scoop out ALL of the seeds, and cut the sliced jalapenos in half, horizontally. (You’ll end up with jalapeno quarters.)

Put about a teaspoon of the cheesy filling in each jalapeno quarter.

Pat the sausage into as many 3-inch circles as you have jalapeno quarters.

Place a stuffed jalapeno in the center of each sausage circle.

Wrap the sausage around the jalapenos, completely, and form into an egg shape.

Brush the “eggs” with the Butcher BBQ marinade. Roll in Shake & Bake, if you desire.

Put the “eggs” on the baking sheet, and bake for about 20 minutes. Watch carefully; when the sausage is cooked, they’re done. If you want them to be a little browner, put the sheet under the broiler for a few minutes.

You can also cook Texas Pepper Jelly’s Armadillo Eggs on the grill.

Serve with various dressings and dips. My daughter uses Ranch dressing, my husband uses salsa, and my son dips them in everything. As for me, I like to dip mine in Loco Cheese Dip.

I mean, has anybody ever really had enough cheese?

SuperBowl Food: Texas-Style Cheesy Chicken Dip! (Crockpot Style!)

You can’t have too many dips at your SuperBowl party, and that’s not even counting your in-laws!

Texas Pepper Jelly’s Texas-Style Cheesy Chicken Dip will become one of the hits of the evening, along with all those painful tackles you’ll all be watching on the big screen. . . .

Ingredients:

One 8-oz package of cream cheese (I use Neufchatel) – softened
1/2 cup of ranch dressing
1/4 cup of Spicy Peach Grilling Sauce
1/4 cup finely diced peaches
1/2 cup crumbled mozzarella cheese
1 cup shredded cheddar cheese
2 cups finely shredded cooked chicken

What to do:

Sunday morning, get out your crockpot, and preheat it on low.

Stir the cream cheese in a medium bowl with the dressing, grilling sauce, and mozzarella cheese. Stir in the shredded chicken and mix well.

Put this mixture in your crockpot, cover with the shredded Cheddar cheese, and turn it on High. Let the mixture cook until bubbly. Once the mixture bubbles and the cheddar cheese browns, turn crockpot to low and let it wait for your guests to arrive – it’s ready to eat any time now. Stir, and serve with chips, veggies, breadsticks, or whatever you wish to DIP!

SuperBowl Food: Spicy Pepperoni Crescents!

We can’t ever put enough SuperBowl food on the coffee table, can we! They’ll devour everything we put before them, so why not put as many nutritious snacks on that SuperBowl buffet as we can!

Texas Pepper Jelly’s Spicy Pepperoni Crescents are so easy to make, so delicious, and not all that bad for ya!

Ingredients:

2 tubes of crescent rolls
2 packages sliced pepperoni
Mozzarella cheese
Garlic powder
Pepper Jelly, any flavor (why not put an assortment of flavors on the table?)
Loco Cheese Dip

What to do:

Preheat your oven to 375. Get out a large cookie or pizza pan.

Unroll the crescent rolls, and on each one, put 8 or so pieces of pepperoni. Cover the pepperoni with Mozzarella, and roll the crescents up. Dust with garlic powder, and bake for about 8-10 minutes, or until golden.

Pile the crescents on a big tray or platter, and serve with Texas Pepper Jelly and Loco Cheese Dip for dippin’ purposes.

Texas Pepper Jelly’s Spicy Pepperoni Crescents will be a huge hit at your SuperBowl party!

SuperBowl Food – Texas Style! SuperBowl Sliders!

Looking for the best SuperBowl food? You’re at the right place! Texas Pepper Jelly’s recipes are almost ALL well-suited for your couch football fans, and our favorites are featured right here!

Click that link up there and you won’t need to search anywhere else for awesomely good, spicy football food.

And while we’re talking about SuperBowl food, let’s just add this to the list of sure-fire couch-pleasers:

SuperBowl Sliders! (YOu know – miniature cheeseburgers!)

Ingredients:

4 pounds ground beef
5 large onions, cut into rings
1 jar Loco Cheese Dip
Two packages of dinner rolls, approximately 2 dozen rolls
Condiments as desired

What to do:

Form the ground beef into small patties, about 3 inches in diameter
In a large frying pan, lay the onion circles in the pan, and put the hamburger patties on top of the onions. Don’t worry about making them even. Fry the hamburger patties on medium-low heat, turning several times to insure doneness but not burning. The onions will carmelize and “share their wealth” with the hamburger. When the burgers are done, scoop them up, along with the onions, and put one patty on the bottom half of a split dinner roll. Generously spread Loco Cheese Dip over the burger, and replace the top bun. Put the cooked onions in a bowl- they’ll be a condiment. Each time you take up a batch of burgers, replace the cooked onions with fresh-cut.

football food, Loco Cheese slidersWhen you’ve got a huge platter of Loco Cheese Dip-covered mini-burgers-on-a-dinner-roll, bring it into the TV room, put it on the coffee table along with whatever condiments (don’t forget the onions!) your crew wants.

Then, stand back. Or take your place on the couch and grab a slider yourself. Football isn’t only for the guys, you know.

My husband refers to SuperBowl Sliders as “a man’s hors d’oeuvres,” and he just might be right!

He also wanted me to tell you that you can’t fix too many of these. However many you make, they’ll devour.

Strawberry Habanero Cake! A Superbowl Specialty!

Texas Pepper Jelly cake It’s still winter, of course, but it won’t be all that long until spring, and with the spring come the strawberries!

Our Strawberry Habanero cake will turn your simple dinner dessert into a real party! And did I mention that it’s unbelievably delicious?!

You can, of course, make the cake completely from scratch, but our version is a lot easier!

Ingredients:

1 strawberry cake mix
2 eggs
1/8 cup oil
1/4 cup Strawberry Habanero pepper jellyTexas Pepper Jelly Strawberry Habanero
1/4 cup water
1 cup sliced strawberries
1 can strawberry icing, or make your own.

What to do:

In a large mixing bowl, combine all ingredients except the sliced strawberries and icing, and mix well. Pour into two buttered layer cake pans, and bake for approximately 32 minutes. When your toothpick comes out clean, your cake is done.

Let the cakes cool. Turn one layer upside-down onto a plate and frost thickly. Turn the other layer right-side-up on top of the first layer, and frost completely. Cover frosting with sliced strawberries.

I usually let the cake chill in the refrigerator for an hour or two before I serve it. It’s great with ice cream! I also like to mix a tablespoon of Strawberry Habanero pepper jelly in the icing before I start frosting the cake. Your call.

Sweet and Spicy Apple Pecans

easy snacks, ,easy suppers What’s good on ice cream? REPHRASE: What’s good for you and good on ice cream?

Texas Pepper Jelly’s Sweet and Spicy Apple Pecans, that’s what.

And, it’s a crockpot recipe, which means little or no effort on your part but still delicious, nutritious, and destined to become a family favorite!

Ingredients:

1 pound pecan halves
2 tablespoons honey
1 teaspoon chili powder (or to taste)
1/2 teaspoon onion powder (or finely diced onion)Texas Pepper Jelly, Granny Smith apple, pecans
1/4 teaspoon garlic powder
1 Granny Smith apple, peeled and very finely chopped
1/2 cup Apple Habanero pepper jelly

What to do:

Put all of the ingredients in your crockpot and stir well. Make sure all the pecans and apple pieces are coated.

Cover and cook on high for 30 minutes.

Turn slow cooker to low, stir, and cook for another hour.

Transfer the mixture to a baking or pizza sheet, and let cool completely.

Get out the ice cream and pie.

P.S. Your house will smell WONDERFUL all day long.

SuperBowl Food: Hot Crockpot Spinach Dip

slow cooker, hot summer nights, perfect summer cooker Winter snacks should be hot – hot with heat and hot with peppers! Hot winter snacks warm us up, all the way through.

Crockpot recipes are so easy, and Texas Pepper Jelly’s delicious and nutritious Hot Crockpot Spinach Dip is no exception.

Ingredients:

1 box (10 oz) frozen chopped spinach, thawed and thoroughly drained
1 cup mayonnaise (do not substitute Miracle Whip)
1/2 cup sour cream (not fat-free)
1/2 cup Apple Habanero pepper jelly
1/4 cup finely chopped apples (peeled) (applesauce works, too)
2 tablespoons garlic powder
3/4 cup grated Parmesan cheese
1/2 cup diced tomatoes (if you use canned, drain thoroughly!)
1/4 cup finely diced onion

What to do:

Combine all ingredients in a large mixing bowl and mix well. Put mixture in your slow cooker, cover, and set to “low.”

Go to work, if it’s morning. Go to bed, if it’s night. Let the mixture cook in the crockpot for 8-10 hours. Turn crockpot off, and let “set” for an hour or two.

Pour into bowl, surround with breadsticks, chips, raw veggies, whateverspicy snack food, football food, spinach dip your family or guests like best to dip. Stand back.

Don’t count on any leftovers. There never are any at my house. My husband and son and their friends will clean up every bite of this dip in one evening. I’ve taken to hiding a cup for my daughter and me; otherwise, it’s too dangerous to try to dip.

Texas Jalapeno Passion Dip

Merry Christmas from Texas Pepper Jelly

Merry Christmas from Texas Pepper Jelly!

Many people are snowed in right now, thanks to the 2012 Christmas blizzards covering the midwest with snow. This is a good time for families to put a holiday movie in the DVD player, put some Texas Jalapeno Passion Dip and some crackers on the coffee table, and snuggle up together on the couch! Our jalapeno dip will warm everyone through and through!

Ingredients:

Dip:

6 strips of crispy, diced bacon
2 8-oz packages of softened cream cheese (Neufchatel works, too.)
1/2 cup mayonnaise (I use Miracle Whip, but there is a slight difference. Try both and see which you like better.)
1/2 cup Texas Passion Jalapeno Pepper Jelly
1 cup of shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup finely diced green onion

Topping:

1 cup finely crushed Ritz crackers
1/2 cup parmesan cheese
1/2 stick melted butter or margarine (not whipped)

What to do:

Preheat your oven to 350, and get out a large casserole dish.

Combine all of the dip ingredients in a large bowl, and mix well.

Transfer these ingredients to your casserole dish. If you want a thick (tall) dip, use a deeper, smaller dish.

Combine all the topping ingredients and sprinkle over the top of the dip.

Bake in that 350 oven for about 25 minutes. After 15 minutes, check regularly, for when the topping starts to bubble, it’s ready to remove from the oven.

Let the dip “set” for about a half hour before diving into it with the assorted crackers. Remember, it’s really hot at first, so keep an eye on the smaller children.

Texas Jalapeno Passion Dip will become one of your family’s Texas Pepper Jelly winter dip, jalapeno, passion pepper jellyfavorite snacks after tonight. Seriously.

Oh, it’s great with breadsticks and cut vegetables, too. Just remember, it’s jalapeno, and that means hot, with more than just the oven heat!

Spicy Texas Lasagna and Christmas

Texas Pepper Jelly spicy lasagna Lasagna is one of my husband’s favorite meals, and Texas Pepper Jelly’s lasagna is the best of any and all lasagnas you’ve ever had or ever will have. No exaggeration. We know you like our cheesy chicken lasagna, but you’ll add our Spicy Texas lasagna to your favorites, too.

Ingredients:

lasagna noodles, uncooked
2 cans spaghetti sauce
one cup sliced fresh mushrooms
one cup diced green pepper
1/2 cup diced red pepper
2 large onions, diced
2 cups shredded swiss cheese
1/2 cup shredded mozzarella cheese
any other tag ends of shredded cheese you’ve got, leftover in the fridge
1 tablespoon garlic powder
1/2 cup cooked and well-drained ground beef
1/2 cup cooked and well-drained sausage
1/4 cup finely shredded pineapple, well drained
1/2 cup Texas Pineapple Habanero Rib Candy

What to do:

In a large, deep lasagna baking dish, spray thoroughly with canola or olive oil. line the bottom with uncooked noodles.

On top of the noodles place half of each ingredient in whatever order your family prefers, with the cheeses on top. Put more uncooked noodles on top of the cheese, and build again.

On the very top, put more uncooked noodles. Top with sauces and cheese.

Bake at 325 for approximately an hour, checking several times to make sure the cheese doesn’t burn. When the noodles are soft, the lasagna is done.

Serve with a nice tossed salad, and you’ve got paradise in a plate.

Zesty Texas-Style Crockpot Sloppy Joes

Who doesn’t love sloppy joes? I tend to sing the Adam Sandler song about sloppy joes as I put this recipe together, but I’ve always been classy like that. This sloppy joe recipe will become your family’s favorite sloppy joe recipe after one meal – it happened that way at my house!

Ingredients:

1 pound ground beef, crumbled, cooked, and WELL DRAINED
1 teaspoon garlic powder
one large onion, finely chopped
one green bell pepper, finely chopped
1 raw carrot, finely chopped
1/4 cup Texas Pepper Jelly’s Candied Jalapenos, chopped fine
1 can black beans, drained and mashed
1/4 cup tomato paste
1/2 cup tomato sauce
1/2 cup ketchup
1 teaspoon red wine vinegar
dash cumin
dash black pepper
dash chili powder

What to do:

Put everything in your crockpot and stir well. Set dial to “low” and forget about it for 6 hours or so.

Set out the bun, chips, and tossed salad, and you’ve got a nutritious, delicious meal. All those vegetables in the mixture make these sloppy joes into a dinner, not merely a lunch. This isn’t junk food, parents – it’s GOOD for your kids!

Sometimes I use mashed refried beans instead of black beans; my kids like it that way, too, but they prefer the black beans.

I also break the crockpot rules and will occasionally remove the lid and give the mixture a stir. If it seems dry, add a little – VERY little – water.

Texas-style Zesty Sloppy Joes are a perfect football-fan food, too!
