Sweet and Spicy Apple Pecans

easy snacks, ,easy suppers What’s good on ice cream? REPHRASE: What’s good for you and good on ice cream?

Texas Pepper Jelly’s Sweet and Spicy Apple Pecans, that’s what.

And, it’s a crockpot recipe, which means little or no effort on your part but still delicious, nutritious, and destined to become a family favorite!

Ingredients:

1 pound pecan halves
2 tablespoons honey
1 teaspoon chili powder (or to taste)
1/2 teaspoon onion powder (or finely diced onion)Texas Pepper Jelly, Granny Smith apple, pecans
1/4 teaspoon garlic powder
1 Granny Smith apple, peeled and very finely chopped
1/2 cup Apple Habanero pepper jelly

What to do:

Put all of the ingredients in your crockpot and stir well. Make sure all the pecans and apple pieces are coated.

Cover and cook on high for 30 minutes.

Turn slow cooker to low, stir, and cook for another hour.

Transfer the mixture to a baking or pizza sheet, and let cool completely.

Get out the ice cream and pie.

P.S. Your house will smell WONDERFUL all day long.

Spicy Texas Lasagna and Christmas

Texas Pepper Jelly spicy lasagna Lasagna is one of my husband’s favorite meals, and Texas Pepper Jelly’s lasagna is the best of any and all lasagnas you’ve ever had or ever will have. No exaggeration. We know you like our cheesy chicken lasagna, but you’ll add our Spicy Texas lasagna to your favorites, too.

Ingredients:

lasagna noodles, uncooked
2 cans spaghetti sauce
one cup sliced fresh mushrooms
one cup diced green pepper
1/2 cup diced red pepper
2 large onions, diced
2 cups shredded swiss cheese
1/2 cup shredded mozzarella cheese
any other tag ends of shredded cheese you’ve got, leftover in the fridge
1 tablespoon garlic powder
1/2 cup cooked and well-drained ground beef
1/2 cup cooked and well-drained sausage
1/4 cup finely shredded pineapple, well drained
1/2 cup Texas Pineapple Habanero Rib Candy

What to do:

In a large, deep lasagna baking dish, spray thoroughly with canola or olive oil. line the bottom with uncooked noodles.

On top of the noodles place half of each ingredient in whatever order your family prefers, with the cheeses on top. Put more uncooked noodles on top of the cheese, and build again.

On the very top, put more uncooked noodles. Top with sauces and cheese.

Bake at 325 for approximately an hour, checking several times to make sure the cheese doesn’t burn. When the noodles are soft, the lasagna is done.

Serve with a nice tossed salad, and you’ve got paradise in a plate.

Texas-Style Chicken Nuggets

spicy chicken, texas chicken nuggets Chicken nuggets are probably one of your children’s favorite foods, but our Texas-style Chicken Nuggets will be one of your entire family’s favorites!

Ingredients:

3/4 cup lemon juice (fresh, not that stuff that comes in the plastic lemon!)
1/3 cup water
1 1/2 tablespoon crushed dried rosemary
1 tablespoon garlic powder
2 teaspoons Texas Bird Bath
2 teaspoons Worcestershire sauce
4 boneless chicken breasts, cubed
2 clices toasted mixed grain bread
1/2 cup chopped almonds, toasted (optional) (but they’re really good)
3 egg whites, beaten

What to do:

In a medium bowl, combine the lemon juice, water, rosemary, garlic, Texas Bird Bath, and Worcestershire sauce. Add the chicken to this marinade, make sure each piece is covered, cover tightly, and chill in the refrigerator overnight.

Toast the bread, and grind it to coarse crumbs. Stir in the almonds.

Preheat your oven to 400 degrees.

Lift the chicken from the marinade, roll in the eggs whites, and then roll in the crumb mixture. Make sure the chicken is completely coated.

Place the chicken on a greased cookie sheet and bake for 10-12 minutes. Serve hot, although my kids love these nuggets cold, too.

Serve with various Texas Pepper Jellies for dipping.

If this is for a meal, this recipe serves 4. If you’re making this recipe as a snack, it will serve more.

Texas Quiche

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food Texas Quiche is easy, delicious, and maybe a little fattening. It’s great for a family supper or a company dinner.

Ingredients:

1 1/2 cups finely diced cooked ham
1 cup Loco Cheese Dip
1 1/2 cup heavy cream
3 beaten eggs
dash salt
dash pepper
dash nutmeg
1 unbaked 9-inch pie shell

What to do:

Preheat your oven to 350. Combine all of the above ingredients and pour into the unbaked pie shell. Bake in the preheated oven for 30-35 minutes, until golden brown on top and “set” in the center. The toothpick test works.

Let the quiche “set up” for 10 or so minutes before cutting into it.

This is an attractive as well as delicious dish.

Spicy Texas Veggie Dip

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food Looking for a quick, easy, tasty, and inexpensive vegetable dip for a hot summer night, a quick snack, or a party? Look no further! Texas Pepper Jelly’s Spicy Texas Veggie Dip is what you’re seeking, and you’re in the right place!

Ingredients:

1 cup sour cream (don’t use fat-free)
1/2 cup finely grated Cheddar cheese
1/2 cup Loco Cheese Dip
1/2 cup mayonnaise or Miracle Whip (I’ve used both and the difference is subtle)
3 tablespoons minced green pepper
2 tablespoons minced red pepper
1 tablespoon Texas Rib Candy, any flavor

What to do:

Mix, chill, and serve with pretty much any kind of raw vegetables your family or guests like. My son spreads this mixture on bread and eats it like candy. It’s also good with crackers and breadsticks.

Red, White, & Blue Spicy Fruit Salsa for a Hot Fourth of July

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food Happy Independence Day, Texas Pepper Jelly fans! Here’s our famous red, white, and blue Spicy Fruit Salsa, especially for your Fourth of July gathering!

Don’t assume that “salsa” will always mean “red sauce!” Texas Pepper Jelly’s amazing Spicy Fruit Salsa is one of our many exceptions to THAT rule!

Spicy Fruit Salsa is perfect for these hot summer days; it’s cool and refreshing, and there’s just something about fruit that quenches thirst at a glance.

Ingredients:

2 kiwis, peeled and diced
2 Granny Smith apples, peeled, cored, and diced (any kind of apple will do, but Granny Smith apples are our favorites)
1 cup of raspberries or blackberries (I use both when I have them)
1 1/2 cups of strawberries, diced
1 cup of green seedless grapes, halved
1/2 cup of blueberries
2 tablespoons of brown sugar
1/4 cup of Apple Habanero pepper jelly
1/4 cup of Strawberry Habanero pepper jelly

What to do:

Put all of the above ingredients in a large mixing bowl and, stirring gently, mix thoroughly. Refrigerate overnight, or at least a few hours.

Put it on the table and step back.

This salsa is delicious no matter what’s dipped into it; heck, my husband just spoons it as if it were cereal. Stay tuned for our next post, which will give you a fantastic recipe for cinnamon tortillas, which are the PERFECT thing to use with this and any other dessert-type dip.

Spicy Texas Pinwheel Meal

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food You might as well print out this recipe and add it to your “family favorites” file, because once your family dives into this delicious Spicy Texas Pinwheel Meal, they’re going to ask for it weekly until they all grow up and move out. This is also an excellent party food, or snack food for football parties.

Ingredients:

1 cup shredded chicken
8 ounces of shredded mozzarella cheese
4 ounces of shredded cheddar cheese
1/2 cup of Texas Pepper Jelly’s Apple Habanero Rib Candy
1/3 cup of ranch dressing
1/4 cup of shredded, peeled apple
1/4 cup of water chestnuts, sliced thin
1/3 cup of mushrooms, cut into small pieces
1/4 cup of pimentos, drained thoroughly
1 rectangle-shaped pizza dough, home-made or store-bought (also works with pie crust or biscuit dough)

What to do:

Preheat your oven to 425.

On a well-floured surface (I use my table top) roll the pizza dough into a long rectangular shape. Round won’t work.

Mix together the Ranch dressing and Rib Candy, and brush across the dough. Add all of the other ingredients, except the cheese, and spread these over entire surface of dough. Cover with both cheeses.

Begin rolling the dough; go slowly, or you’ll push the chicken mixture to one end. Roll this dough as if it were cinnamon bread! Once rolled, tuck in the ends so the middle doesn’t leak out in your oven.

Spray a rectangular baking sheet with Canola spray, and place the bread on the pan. Lift it with both hands!

Bake for 20 minutes; check to make sure it’s done. If it seems “raw,” return to oven and bake another 10 minutes.

Let it set up for 15 minutes, slice, and enjoy. It’s really pretty when it’s cut into individual slices! Don’t make the slices too thin or you’ll lose the contents. Don’t count on any leftovers, although if by some remote chance you have some, wrap them in foil and freeze. This Pinwheel Meal is even better with a little time on it. The problem is slapping everybody’s hands away from that last piece so YOU can eat it later!

Spicy Strawberry Shortcake? Yes, Please!

Now, if you’re one of those people who must pour the sugar over your strawberries before you can eat them, just skip right over to your dentist’s website and make an appointment for yourself. This strawberry shortcake recipe isn’t sweet, except that strawberries have a natural sweetness. This recipe will make a strawberry shortcake that is both fructose-sweet AND Texas spicy – in other words, the perfect combination!

To fix the strawberries for our spicy Texas strawberry shortcake, simply slice the strawberries and mix them, in a medium bowl, with our Strawberry Jalapeno or, if you like it extra spicy, our Strawberry Halapeno pepper jelly. Texas Pepper Jelly strawberry jalapeno

There are all kinds of shortcakes, both store-bought and home-made, but many people don’t remember that the original shortcakes were not sponge cakes at all, but more like crusty biscuits. When I make shortcake, this is the recipe I use:

3 cups all purpose flour
3 Tbsp granulated sugar
1 1/2 Tbsp baking powder
3/4 teaspoon salt
12 Tbsp cold unsalted butter, cut into small pieces
1 1/2 cups heavy cream (half and half works, too)
1 1/2 teaspoons vanilla extract

Put all the dry ingredients, plus the butter, in a large bowl, and cream together. You’ll probably start using a fork and end up using your fingers. Make a hole in the middle of this mixture and pour into it the cream and vanilla. Using that fork, toss it all together. The dough will have a “shaggy” look, and it won’t be as “combined” as regular biscuit dough. Your shortcake dough should not feel “wet” at all. Put the dough on a floured board and knead by hand until you’ve got a fairly loose ball.

With your rolling pin, roll the dough into a square, about an inch thick. Cover with plastic or waxed paper and put it in the refrigerator for about a half hour. In the meantime, preheat your oven to 450.

Remove the dough from refrigerator, and, using a knife or a biscuit cutter, cut the dough into 9 or 10 squares or rounds, and spread them about 2 inches apart on a large buttered baking sheet.

Bake at 450 for about 20 minutes (if your biscuits are thinner, you’ll not only have more of them; they will only need 12-15 minutes!) and remove from the oven when browned.

While they’re still hot, slice them in half horizontally and cover with your pepper jelly-saturated strawberries. Top with whipped cream or yogurt, if you’re so inclined, and dig in.

As with all of Texas Pepper Jelly’s recipes, don’t count on any leftovers.

P.S. If you’re short of time, store-bought shortcakes are delicious, too. So are the sponge-cake varieties. Heck, your strawberry/pepper jelly mixture is good all by itself. Or on toast. Or as part of a sandwich. Or in your salad. Your call!

What’s Cookin’ Wednesday: Spicy Apple Pie Dip

What's Cookin' Wednesday, Texas Pepper Jelly, spicy foodOh, this is sooooo good with pretty much any kind of chips or veggies! My kids like to dip those pie-crust breadsticks in it, and my husband likes to spread it on bagels!

Ingredients:

3 cups of peeled, cubed Granny Smith apples
1/4 cup Apple Habanero pepper jelly
2 tablespoons fresh lemon juice (don’t use bottled!)
4 tablespoons brown sugar
1/4 teaspoon cinnamon
2 teaspoons cornstarch, dissolved in a tablespoon of warm water

What to do:

Mix everything, quite thoroughly, in a bowl, and let it “set” for about an hour, in the refrigerator.

Stir well before serving. This stuff is sooooo good.

How About Some Homemade Texas BBQ Sauce!

BBQ sauce, Texas BBQ sauce We all know that there is nothing as good as barbecued meat, and we also know that no bottled sauce is as good as homemade sauce! Barbecue sauce, that is!

Ingredients:

1 cup ketchup or tomato sauce
1 cup of Texas Pepper Jelly’s Apple Habanero Rib Candy
1 cup water
6 teaspoons brown sugar
6 tablespoons white granulated sugar
1 teaspoon black pepper
1 teaspoon dry mustard
1 1/2 teaspoons paprika
Juice of one large lemon
1 teaspoon Worcestershire sauce
1/2 cup apple cider vinegar
1/4 cup apple juice
2 teaspoons corn syrup

What to do:

Dump everything into a large saucepan and bring to a boil, stirring constantly. Don’t leave it!

Cover and simmer on as low a setting as possible for two hours or so, until it thickens. Keep it in the refrigerator.

Use it on ribs, chicken, pork, beef. . . anything that goes well with barbecue sauce.

Um, that would be pretty much anything, right?

This sauce is also fabulous in your baked bean recipe. And to dip your chicken nuggets into.

Etc.

It will stay fresh in your ‘fridge for a week, but don’t count on it lasting that long.

P.S. If you don’t have time to stand over the stove, just dump all the ingredients in your crockpot and let it simmer in there all day. It’ll be ready for your grill when you get home from work and start supper.
