Summer Time is Cookout Time

Father's Day cookout, Fourth of July cookout It might not be officially summer yet (that’s not until June 21st!) but summer cookouts have begun, for sure. Father’s Day is Sunday the 14th, and, weather permitting, that’s always a good day for a cookout. And it isn’t all that long afterwards that it will be time for the biggest cookout day of the summer – July 4th, Independence Day.

Memorial Day Suggestions and Recipes!

Memorial Day, Texas style

Memorial Day weekend is upon us – the weekend of family reunions, get-togethers, picnics, cookouts, family, friends, all linked together with memories and fantastic food.

The traditional Memorial Day meal is a cookout, naturally. By this time, we’ve all used our grills and mad outdoor cooking skills several times – we hope. This weekend is really special, though. Memorial Day. Our reunions will be filled with beloved people who are there in body and people who are there in spirit and memory.

And, there will be food. Exceptionally delicious food, too. Here are some of Texas Pepper Jelly’s most beloved picnic recipes.

First of all, the meat. Grilled outdoors, covered with homemade BBQ sauce, Texas Pepper Jelly or Rib Candy, injected with Butcher’s best, and grilled to perfection, over charcoal or gas. Remember, lean meats grill best, as there isn’t as much fat to drip down and cause flareups, and thinner glazes aren’t as likely to burn.

What’s a picnic without Pineapple Sweet Fire Potato Salad, after all?

Don’t count on having any Texas Pepper Jelly cole slaw left over for tomorrow.

Got a few vegetarians at your cookout? Don’t worry – we’ve got some great recipes for a vegetarian cookout, too!

You can’t have a cookout without baked beans!

For dessert, Texas Pepper Jelly has several awesome recipes for all kinds of pies and cakes, but for an outdoor cookout, why not let your guests make their own ice cream in a baggie? It’s fun and delicious, and each guest can add the pepper jelly, fruit, or whatever that they individually prefer! (We like it best with pepper jelly and diced fruit.)

I wear it whenever we grill out in the summer, and I’ve already worn it twice this spring. This weekend it’s going to freeze again, but where I live, the seasons change every five minutes, and in a few days it’ll be warm again.

My Texas Pepper Jelly shirt is my favorite t-shirt, and just seeing it makes me think of the awesome products I’ve stocked my pantry with in preparation for official grilling-out season.

I’ve got several flavors of pepper jelly, two jars of Loco Cheese Dip, three bottles of Rib Candy, and a jar of Pineapple Sweet Fire Pickles, so far, and I’m not done ordering yet. Besides, I can’t keep any of Texas Pepper Jelly’s products IN my pantry for more than a few days, because my family is crazy about them and when everybody’s home, things mysteriously disappear.

P.S. Those Pineapple Sweet Fire Pickles are really good. They’re also on sale right now.

P.P.S. Did I mention that those pickles are really good? Holy cow, SO GOOD!

Pineapple Sweet Fire Potato Salad

Whatever the weather outside, there's nothing like some good potato salad inside. Inside the house, and inside the stomach!

Texas Pepper Jelly has posted several awesome potato salad recipes, but this one, which uses Pineapple Sweet Fire Pickles, is my favorite so far. Potato salad is supposed to have a little kick to it; well, ours has a BIG kick to it! Big kick - bit hit!

Ingredients:

4 large potatoes, peeled and cubed, boiled
4 large potatoes skin-on and cubed, boiled
1/2 cup diced green pepper
1/2 cup diced red pepper
1/4 cup pimento
1/2 cup diced onion
2 boiled eggs, diced
1/2 cup Pineapple Sweet Fire pickles, diced
2 tablespoons yellow mustard
1 cup mayonnaise or Miracle Whip (I use Miracle Whip)
dash salt
dash pepper
dash paprika

What to do:

In a large bowl, mix all of the above ingredients except the paprika thoroughly. Be careful that you don’t mash the boiled potatoes. The skin on the unpeeled potatoes will probably slip off; this is okay. Just mix it in along with everything else.

Put the thoroughly mixed ingredients in a nice serving bowl, if you’re eating soon, or in a Tupperware-type bowl with a sealing lid, if you’re making your potato salad well ahead of time. Sprinkle the paprika over the top of the salad, cover, and refrigerate. Try to get the salad good and cold before you serve it; I usually make it a day ahead so the flavors and textures have time and opportunity to blend well.

Our Pineapple Sweet Fire Potato Salad is the perfect accompaniment to some good BBQ or grilled chicken or pork, and of course the best grilled meat will be covered with Texas Pepper Jelly’s Rib Candy or rubs.

Add to these some baked beans and maybe some corn (on the cob, in season) and you’ve got my all-time favorite meal of all time.

SuperBowl Food: Texas-Style Cheesy Chicken Dip! (Crockpot Style!)

You can’t have too many dips at your SuperBowl party, and that’s not even counting your in-laws!

Texas Pepper Jelly’s Texas-Style Cheesy Chicken Dip will become one of the hits of the evening, along with all those painful tackles you’ll all be watching on the big screen. . . .

Ingredients:

One 8-oz package of cream cheese (I use Neufchatel) – softened
1/2 cup of ranch dressing
1/4 cup of Spicy Peach Grilling Sauce
1/4 cup finely diced peaches
1/2 cup crumbled mozzarella cheese
1 cup shredded cheddar cheese
2 cups finely shredded cooked chicken

What to do:

Sunday morning, get out your crockpot, and preheat it on low.

Stir the cream cheese in a medium bowl with the dressing, grilling sauce, and mozzarella cheese. Stir in the shredded chicken and mix well.

Put this mixture in your crockpot, cover with the shredded Cheddar cheese, and turn it on High. Let the mixture cook until bubbly. Once the mixture bubbles and the cheddar cheese browns, turn crockpot to low and let it wait for your guests to arrive – it’s ready to eat any time now. Stir, and serve with chips, veggies, breadsticks, or whatever you wish to DIP!

Texas Bird Bath: Best Turkey Marinade EVER!

For Thanksgiving this year, we here at Texas Pepper Jelly have a suggestion: why not marinate your turkey with Texas Bird Bath this year? We baked a turkey over the weekend and used Texas Bird Bath as a marinade, put the whole thing in a bag, and baked it. The kids are still talking about it. There was only enough turkey left to make a few sandwiches, which we put a little more Bird Bath on and heated in the microwave. I am not exaggerating when I tell you that this was one of THE most successful cooking experiments I’ve ever done.

In a few weeks, the whole extended family will be here for Thanksgiving, and I’m cooking their turkey with Texas Bird Bath, too.

I’m telling you – my kids and my husband were fighting over the turkey SKIN, Texas Bird Bath, pepper jelly, baked turkey, turkey skinand usually we just peel that off and throw it away. With Texas Bird Bath, it turned out so shiny golden brown, and it smelled soooooo good, and it tasted even better.

Texas-Style Chicken Nuggets

spicy chicken, texas chicken nuggets Chicken nuggets are probably one of your children’s favorite foods, but our Texas-style Chicken Nuggets will be one of your entire family’s favorites!

Ingredients:

3/4 cup lemon juice (fresh, not that stuff that comes in the plastic lemon!)
1/3 cup water
1 1/2 tablespoon crushed dried rosemary
1 tablespoon garlic powder
2 teaspoons Texas Bird Bath
2 teaspoons Worcestershire sauce
4 boneless chicken breasts, cubed
2 clices toasted mixed grain bread
1/2 cup chopped almonds, toasted (optional) (but they’re really good)
3 egg whites, beaten

What to do:

In a medium bowl, combine the lemon juice, water, rosemary, garlic, Texas Bird Bath, and Worcestershire sauce. Add the chicken to this marinade, make sure each piece is covered, cover tightly, and chill in the refrigerator overnight.

Toast the bread, and grind it to coarse crumbs. Stir in the almonds.

Preheat your oven to 400 degrees.

Lift the chicken from the marinade, roll in the eggs whites, and then roll in the crumb mixture. Make sure the chicken is completely coated.

Place the chicken on a greased cookie sheet and bake for 10-12 minutes. Serve hot, although my kids love these nuggets cold, too.

Serve with various Texas Pepper Jellies for dipping.

If this is for a meal, this recipe serves 4. If you’re making this recipe as a snack, it will serve more.

Spicy Grilled Taters

pepper jelly, feast, fridays, spicy goodness Oh my gosh, these grilled potato wedges are SO GOOD! They’re easy, too, especially if you’ve already fired up the grill for the meat.

Put a sheet of foil on part of your grill, as potatoes tend to fall through, and you won’t want to waste a single wedge.

Wash and slice (don’t peel!) several large potatoes of any kind – I’ve used red, white, and even blue potatoes, although the blue ones weren’t as popular with my kids. (It was a Fourth of July whimsy, but you never know until you try, right?)

Brush the potato wedges with various kinds of Texas Pepper Jelly and roast until tender. Times will vary, because grills vary, so turn the wedges a time or two and keep checking for tenderness.

Texas Pepper Jelly’s Spicy Grilled Taters are the perfect side dish for any cookout, whether you’re grilling chicken, ribs, steaks, or whatever!

Spicy Grilled Taters are also good when brushed with Rib Candy.

When we’re ready to eat, I put the bottles of pepper jelly and Rib Candy on the picnic table and everybody pours some in their plates to dip both the potatoes and the meat. I do not use salt when I cook, but with Texas Pepper Jelly products, we really don’t miss it.

My kids stir Rib Candy into sour cream for dipping purposes. It’s great!

Texas Quiche

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food Texas Quiche is easy, delicious, and maybe a little fattening. It’s great for a family supper or a company dinner.

Ingredients:

1 1/2 cups finely diced cooked ham
1 cup Loco Cheese Dip
1 1/2 cup heavy cream
3 beaten eggs
dash salt
dash pepper
dash nutmeg
1 unbaked 9-inch pie shell

What to do:

Preheat your oven to 350. Combine all of the above ingredients and pour into the unbaked pie shell. Bake in the preheated oven for 30-35 minutes, until golden brown on top and “set” in the center. The toothpick test works.

Let the quiche “set up” for 10 or so minutes before cutting into it.

This is an attractive as well as delicious dish.

Red, White, & Blue Spicy Fruit Salsa for a Hot Fourth of July

What's Cookin' Wednesday, Texas Pepper Jelly, spicy food Happy Independence Day, Texas Pepper Jelly fans! Here’s our famous red, white, and blue Spicy Fruit Salsa, especially for your Fourth of July gathering!

Don’t assume that “salsa” will always mean “red sauce!” Texas Pepper Jelly’s amazing Spicy Fruit Salsa is one of our many exceptions to THAT rule!

Spicy Fruit Salsa is perfect for these hot summer days; it’s cool and refreshing, and there’s just something about fruit that quenches thirst at a glance.

Ingredients:

2 kiwis, peeled and diced
2 Granny Smith apples, peeled, cored, and diced (any kind of apple will do, but Granny Smith apples are our favorites)
1 cup of raspberries or blackberries (I use both when I have them)
1 1/2 cups of strawberries, diced
1 cup of green seedless grapes, halved
1/2 cup of blueberries
2 tablespoons of brown sugar
1/4 cup of Apple Habanero pepper jelly
1/4 cup of Strawberry Habanero pepper jelly

What to do:

Put all of the above ingredients in a large mixing bowl and, stirring gently, mix thoroughly. Refrigerate overnight, or at least a few hours.

Put it on the table and step back.

This salsa is delicious no matter what’s dipped into it; heck, my husband just spoons it as if it were cereal. Stay tuned for our next post, which will give you a fantastic recipe for cinnamon tortillas, which are the PERFECT thing to use with this and any other dessert-type dip.
