Texas Pepper Jelly’s Hot & Spicy Chicken Dip

Before you even start making this dip, be sure you’ve got plenty of raw veggies, chips, and anything else your family and friends like to dip into the dip.

Texas Pepper Jelly’s Spicy Chicken Dip is nutritious and filling enough to be the meal, not merely the snack or the appetizer!

Plus, it’s easy to make, makes your whole house smell wonderful, and is absolutely delicious.

Ingredients:

4 chicken breasts, skinned, boned, cooked and shredded
2 (8-ounce) packages cream cheese, softened (I use Neufchatel)
1/2 cup milk (skim works, too)
1/2 cup mayonnaise (Miracle Whip works, too)
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1/2 cup Candied Jalapenos Texas Pepper Jelly, candied jalapenos
2 tablespoons lemon juice (fresh, not bottled)
2 teaspoons garlic powder
1 1/2 teaspoons salt (don’t leave out the salt)
3/4 teaspoon pepper
1 (8-ounce) package shredded pepper-jack cheese

What to do:

In a large bowl, combine everything except the sour cream. Blend thoroughly.

Pour mixture into large buttered oven-safe casserole dish, and bake at 350 for 40 minutes. Mixture will be VERY hot, so pace yourselves and let it cool a bit before you start devouring it.

Texas Strawberry Rhubarb Chutney

Texas Pepper Jelly, strawberry rhubarb chutney Chutney is actually a kind of condiment, intended to be served with meat, cheese, or some other non-dessert-type food. Texas Pepper Jelly’s Strawberry Rhubarb Chutney is so good, you’ll make it again and again. It’s delicious any time of year, but with hot weather fast approaching, having a lovely cold chutney to spread or dip with other summer foods makes lunch a memorable experience.

Texas Strawberry Rhubarb Chutney is easy to make, too! Here’s how.

Ingredients:

2/3 cups sugar (I use Splenda)
1/2 cup vinegar, any kind
1/3 cup raisins, brown or golden (I like to use both!)
1 large finely chopped onion
1 tablespoon ground ginger
4 tablespoons Texas Pepper Jelly’s Strawberry Jalapeno or Strawberry Habanero, depending on how hot your family’s tastes are
Small pinch of ground cloves
1 pound of rhubarb, chopped fine
1/2 cup of strawberries, chopped fine

What to do:

Mix everything except the rhubarb and strawberries in a medium saucepan, on medium heat, and heat to boiling. Boiled 3-6 minutes, or until the mixture becomes syrupy. Add the rhubarb and strawberries, and stir thoroughly.

After stirring a few minutes, add a VERY small pinch of salt.

Continue stirring – carefully, because rhubarb can be very fragile – for about 5 minutes.

Pour into your serving dish and cover tightly. Let it stay in the refrigerator for at least 2 hours, or overnight.

Serve with your ham, cheese, veggies, bread, crackers, etc. Don’t count on any leftovers.

Monday Munchies: Texas Cocktail Weinies

pepper jelly, cocktail weenies, Texas Pepper JellyWhat do you think of when you think of cocktail weinies? (Oh, hush!) Usually, they’re always the same: those miniature hot dogs or sausages in a barbecue-type sauce. They’re often the most popular food on the buffet, especially with men and kids. We won’t try to analyze why.

Our Texas Cocktail Weinies, however, will rock your world. I’m not kidding.

Remember, the best recipes are often the simplest, and Texas Cocktail Weinies is certainly simple. It’s also, even MORE certainly, absolutely delicious.

Here are the directions – you probably won’t need to write them down. You will, however, most certainly want to remember them!

Buy a package of cocktail hot dogs or sausages, or both. (I buy both and mix it up)

Drain them, and dump them into a large bowl or casserole, something oven-friendly.

Pour any flavor of Texas Pepper Jelly over them. You can stop there, and have a delicious treat, or you can go a step further and then pour a bottle of Texas Rib Candy over the pepper jelly. Mix well. Heat in oven or microwave, start sticking toothpicks in as many hot dogs/sausages as are exposed, put the box of toothpicks beside the bowl or casserole, and step back.

Yum. We’ve used Pineapple, Berry Medley, and Peach Habanero pepper jellies so far, and we’re not finished yet. Summer’s almost here, and Texas Cocktail Weinies will be the perfect addition to any menu.

Super Bowl Deli Dip: Texas Rib Candy Makes It Extra Awesome!

Texas pepper Jelly super bowl food There’s nothing like a big bowl of awesome dip and all kinds of crackers, chips, and raw veggies, when you’re sitting on the couch with family and friends, enthusiastically watching a good football game, is there. . .

Well, here’s one of the best recipes for a great dip that you’ll ever find. It’s easy, too! And, it goes great with anything dip-able!

Get out your food processor, and get to choppin’!

Ingredients:

1/3 pound chopped turkey
1/3 pound chopped pepperoni
1/4 pound chopped ham
1/4 cup chopped provolone cheese
1/4 cup chopped cheddar cheese (Loco Cheese Dip makes it even better!)
1/2 cup chopped onion
1/2 cup Miracle Whip (mayonnaise works, too)
1/4 cup Texas Rib Candy
2 tablespoons Texas Pepper Jelly – any flavor – next time, use a different one!
1/4 cup chopped green pepper
2/3 cup chopped tomatoes

What to do:

In a large bowl, mix together everything except the tomatoes. Cover and let it “set” in the refrigerator overnight, or for at least an hour.

Stir in the tomatoes just before you serve it.

Serve with any kind of crackers, chips, or raw vegetables. Or all of those choices.

Don’t expect any leftovers, but if by chance you have a little dip left over, store it in the refrigerator. It’s even better the next day.

Christmas in Texas: Like A Bowlful of Jelly

Santa, according to the poem, had a belly that shook like a bowlful of jelly when he laughed. Whenever I hear or read that, it’s not regular jelly that comes to my mind any more.

It’s Texas Pepper Jelly.

My family have gotten into the habit of using pepper jelly on something at almost every meal now. So, I’ve gotten into the habit of putting a bowlful of pepper jelly on the table for all three meals.

I’ve caught them all licking the spoon, too.

We put pepper jelly in coffee, sangria, tea, cocoa, and water. We freeze pepper jelly in ice cube trays and drop ‘em in lemonade and punch. We put pepper jelly on mashed potatoes, and toast, and biscuits. We use pepper jelly in baked beans, and salads of all kinds. We marinade chicken, and pork, and fish in pepper jelly. Pepper jelly has replaced butter on our table. My kids put pepper jelly on pancakes and waffles and French toast. My husband makes a peanut butter-and-pepper jelly sandwich when he gets home from school. We stir it into soup. We use it instead of salad dressing. We spread it on most sandwiches.

About that sangria with pepper jelly. . . . I highly recommend that one. I mean, it’s fruit, right?

Candy Pie – But Not What You Think!

Guess what we had for dinner last night – Candy Pie! When I told the kids we were having Candy Pie, their eyes got big, old as they are, and my son whispered, “Awesome!”

He said it again after dinner. So will your kids.

Ingredients:

1 deep-dish pie crust (make sure you have enough for a really deep pie! Actually, I use a cake pan for mine.)
4 large tomatoes, peeled & sliced
1/2 cup chopped fresh basil
3 onions, thinly sliced
1/2 pound bacon, cooked, drained, and chopped (mmm, bacon!)
1/2 teaspoon garlic powder
1 teaspoon oregano
2 cups shredded Cheddar cheese (I used a mixture of whatever cheeses are left over in the fridge.)
1/3 cup Texas Rib Candy

What to do:

Preheat your oven to 375.

In alternating layers, start filling your pastry shell with tomatoes, basil, scallions, bacon, garlic powder, and oregano. Set aside.

In a medium bowl, mix the cheese and Rib Candy, Spread this mixture over the top of the pie and cover with aluminum foil – loosely.

Bake in your preheated 375 oven for a half hour, then remove the foil and bake an additional half hour.

Candy Pie is delicious warm or cold. When it’s cold – a few hours after dinner, for example, my kids scooped it up with all kinds of crackers. My son put a little sour cream on his and pronounced it even more delicious. We all poured a little extra Rib Candy over our individual pieces, more because we all just like the stuff rather than for any logical purpose.

Candy Pie. It’s not what you think – it’s even better.

Monday Munchies: An Old Favorite, But New To My Guests!

Texas Pepper Jelly My box of Texas Pepper Jelly arrived while my Gulf Coast cousins were visiting, and I was thrilled! I knew they liked spicy foods, and I knew that one of my cousins actually made her own pepper jelly, and I was positive they would both agree that Texas Pepper Jelly was the best EVER.

And, I was right!

They were with me when the box arrived, and we brought it into the house immediately, and they passed the jars around, commenting on how pretty the pepper jelly looked in the sunlight. “It’s more than just pretty,” I told them.

So, I got out a brick of cream cheese, cut it into four chunks (I was in a hurry to show off the Texas Pepper Jelly) and poured a little pepper jelly over each piece of cream cheese. I opened a box of Ritz crackers and some wheat thins, and we all jumped in.

My daughter arrived in the middle of this pepper jelly orgy and I could tell by the look on her face that she was thinking, “you got more pepper jelly and didn’t tell me!”

We shared with her.

Four people literally licked that tray clean. My daughter hinted broadly that she would like to take home the opened jars, but this time I put my foot down and kept them.

I am serious when I tell you all that Texas Pepper Jelly is the best pepper jelly on the face of the earth. People from the Gulf Coast, who made their own, agreed: nothing they had ever made or bought in Mississippi held a candle to Texas Pepper Jelly.

Guess what we had for lunch when we returned from the airport today. . . . . peanut butter and pepper jelly sandwiches. And Fritos, which are pretty darn good dipped in Pepper Jelly, too.

We might be addicted to Texas Pepper Jelly. Then again, when I think about it, there’s probably no “maybe” about it. Texas Pepper Jelly has become a staple in our home.
